Ingredients

  1. 1 (32 ounce) package frozen tater tots
  2. 8 ounces lean ground turkey
  3. ½ cup salsa
  4. 2 teaspoons Mexican seasoning blend
  5. 1 ½ cups shredded reduced-fat Mexican cheese blend
  6. ½ cup diced tomatoes
  7. ⅓ cup diced bell pepper
  8. ⅓ cup sliced ripe olives
  9. ½ cup sliced green onions
  10. Light sour cream
  11. Guacamole
  12. Salsa
  13. Chopped fresh cilantro

Instructions

  1. Preheat oven to 425 degrees F. Place tater tots in a single layer on a large baking sheet and cook for 30 minutes or until browned and very crisp, stirring once halfway through cooking.
  2. While tater tots are cooking, cook ground turkey in a large skillet over medium heat until cooked through. Stir in salsa and seasoning and cook for a few minutes more.
  3. Mound tater tots slightly on the baking sheet and sprinkle with half the cheese; top with turkey mixture. Sprinkle with remaining cheese then top with tomatoes, bell pepper and olives.
  4. Cook for 10 minutes more or until cheese is melted. Sprinkle with green onions and serve with any optional toppings desired.

This was a great use of oddball items: tater tots, turkey and avocado. I followed the recipe except for the olives, with good results. Might make next time I need to clear fridge items.
