Tomato Basil Mozzarella Melt

Slices of tomato and mozzarella are placed inside of little baguettes that have been coated with pesto and heated until the cheese has melted.

Ingredients

  1. 6 Sister Schubert’s® Mini Baguettes
  2. ½ cup prepared pesto
  3. 12 slices fresh mozzarella cheese, or more if desired
  4. 4 Roma tomatoes, sliced
  5. Salt and pepper to taste
  6. Fresh basil leaves

Instructions

  1. Place 6 Sister Schuberts Mini Baguettes on a baking sheet and bake rolls according to directions on package. Cool baguettes.
  2. Decrease oven temperature to 375 degrees F.
  3. Carefully slice each Sister Schuberts Mini Baguette in half horizontally. Spread one side of each baguette with pesto. Continue to layer with tomatoes, fresh mozzarella and sprinkle with salt and pepper. Wrap each sandwich in a large piece of aluminum foil, place packages on baking sheet and bake 7 to 10 minutes or until sandwiches are warm and the cheese has melted. Unwrap sandwiches, open and add fresh basil leaves. Serve.
  4. Optional: Sliced prosciutto, red onion, arugula or spinach can be added to the sandwiches for variety. Add arugula or spinach right before serving. Sliced prosciutto and red onion can be added to sandwich with ingredients listed above and then baked.

After having a similar sandwich at Starbuck’s, my husband requested I find a recipe. This one was perfect! I used onion rolls from bakery (sliced then toasted) before following the recipe exactly. Served with tomato soup. Easy, quick and delicious.

Another way to use some of the excess basil from a small plant (that’s thriving) that I recently purchased. I used French bread and garlic olive oil in place of the pesto. My tomatoes were not Roma, so they didn’t hold up great. Still, it was a good, light supper dish.

Easy tasty dinner idea. My boyfriend and I made this used regular hoagie rolls, put some basil infused olive oil on it, toasted it and followed the recipe from there. We also added a few slices of red onion as well and it was delicious! I would definitely make this again.

Just used sub sandwich-type rolls from the grocery store bakery. Put them under the broiler for a minute to crisp them up, then followed the directions. Delicious!

So good! I used torta sandwich bread instead of mini baguettes and it came out AMAZING. It tasted a lot like margherita pizza.

Wonderful sandwich that’s quick, easy and delicious! I didn’t have pesto on hand so I brushed it with a little garlic infused olive oil. I did add some roasted red peppers, proscuitto and fresh spinach (after it was out of the oven). I served it with balsamic vinegar mixed with a little olive oil and red pepper flakes for dipping. Excellent without a ton of effort!
