A lemon vinaigrette is tossed with hearty cooked whole grains before being combined with chopped parsley, cucumber, cherry tomatoes, and mint leaves.

Prep Time: 30 mins
Cook Time: 5 mins
Total Time: 35 mins
Servings: 4
Yield: 8 tacos

Ingredients

  1. 8 Mission® Small/Fajita Super Soft Flour Tortillas
  2. 1 pound medium shrimp, peeled and deveined
  3. 1 teaspoon salt
  4. ¼ teaspoon ground black pepper
  5. ¼ teaspoon crushed red pepper flakes
  6. 2 tablespoons fresh lime juice
  7. 1 tablespoon olive oil
  8. ½ cup diced fresh mango
  9. ½ cup diced red onion
  10. ½ cup fresh cilantro, coarsely chopped
  11. 1 tablespoon Sriracha sauce
  12. ½ cup Ranch dressing
  13. Fresh lime wedges, as needed

Instructions

  1. In a small mixing bowl, combine the ranch dressing and Sriracha. Reserve refrigerated.
  2. In a separate mixing bowl, combine shrimp, salt, black pepper, red pepper flakes, and lime juice. Toss to combine.
  3. Heat a saute pan over medium high heat until hot. Add olive oil, then the shrimp, and saute until pink and cooked through (about 2 to 3 minutes), turning often to cook evenly.
  4. To assemble tacos, place about 4 warm shrimp into each tortilla and top with 1 tbsp. diced mango and 1 tbsp. diced onions. Drizzle with Sriracha ranch dressing and sprinkle with chopped cilantro. Serve with lime wedges to be squeezed over top.
  5. Hint: The spiciness of this dish can be adjusted by adding more or less Sriracha to the ranch dressing.

We have used this recipe several times. It is great as is. I wouldn’t make any changes.

We have made this recipe numerous times because our teen boys love it. Each time, we change it up just a little. We mostly use breaded spicy shrimp (Nashville Hot) so you get the crunch with the breaded shrimp. We always add more Sriracha sauce to the ranch just to kick it up a notch. The sauce is better if you prepare ahead of time. We add lots of chopped mango, sometimes chopped avocado, pepperjack or jalapeno shredded cheese; squeeze fresh lime. Red onion is optional. This recipe is an inspirational one and quick to prepare! For a side dish to go with this, coleslaw with the Marzetti dressing with pineapple or fresh pineapple and then add mango chunks. Yummy!

I took some advice and marinated the shrimp but added a tablespoon of minced garlic and a tablespoon of old bay seasoning to the marinade with 1/4 cup of olive oil – dumped it all in a pan and grilled 2 min a side – was really good. I also added some matchstick carrots to the marinade and cooked them separately for longer until they were softened – was great since I didn’t have any cole slaw for the crunch factor.

My wife and I loved this dish. We added chopped radish, cucumber, lettuce, tomato, and avocado as garnishes. The ranch dressing and sriracha sauce was a bit salty, so I tried to adjust it with chopped cilantro, lime juice, and some sour cream. I thought it helped, but my wife didn’t care for that part.

Made the first with Mission corn tortillas on a griddle added the shrimp, mango salsa with a few cherry tomatoes diced in as well. Second flour tortilla warmed on griddle with salsa and sauce. OMG it was to die for! Went so nicely with a cold brewski at the end of my work week. 2 thumbs zup!

Instead of the Mission tortillas, I used LaTortilla Factory all natural 50% corn 50% flour tortillas. Also, instead of ranch dressing I used an even mix of nonfat plain yogurt and sour cream. I like my food a bit spicier, so I used about 4 or 5 tbsp of Siracha sauce. Other than that, I pretty much followed the recipe, and the tacos turned out great!

This recipe is excellent!… The sauce has the perfect zip to it, and the mango gives it some good tang! It’s also easy to whip together. I added some chopped red peppers and some slices of avocado because I had them handy. Thanks for sharing this delicious recipe!

This was delicious! I left out the onions, just because I’m not a big fan, but it was still great. Took the advice from another reviewer and added the sirracha a little bit at a time and made it took a good, spicy level. Will definitely make again.

Really tasty. Loved the sauce although I was hesitant at first, that part really made the tacos yummy.
