Spicy Beans and Franks for Two

An ancient favorite is given a nutritious makeover in this turkey shepherd’s pie.

Ingredients

  1. 2 tablespoons salted butter
  2. 1 medium onion, vertically sliced
  3. ½ cup tomato sauce
  4. ½ cup beef broth, or as needed
  5. 1 tablespoon all-purpose flour
  6. 1 tablespoon cider vinegar
  7. 1 teaspoon Worcestershire sauce
  8. 1 teaspoon Sriracha sauce, or more to taste
  9. ½ teaspoon white sugar
  10. ½ teaspoon chili powder
  11. ½ teaspoon salt
  12. 1 (15.5 ounce) can dark red kidney beans, undrained
  13. ½ pound all-beef franks, cut into 1-inch slices

Instructions

  1. Melt butter in a large skillet over medium heat. Stir in onion and saute until tender, 3 to 4 minutes.
  2. Whisk tomato sauce, 1/2 cup beef broth, flour, cider vinegar, Worcestershire sauce, Sriracha, sugar, chili powder, and salt together in a small bowl. Add to the onions and cook, stirring constantly, until mixture starts to thicken, about 2 minutes.
  3. Stir in kidney beans and franks. Reduce heat to low, cover, and simmer until franks are heated through, 8 to 10 minutes, adding more beef broth if it becomes too thick.

I used red (pink) beans, which I prefer to red kidney beans, and knockwurst. Good upgrade.

Tasty, with a little heat. Made for 3 adults, with all- beef hot dogs. Yum. Adult son said, “Next time use more adult meat, like polkska keilbasa”. Will do, since we all liked it. Maybe 5 stars then

Black pepper to taste needed. Also added some fresh garlic. Other than that, was quite tasty and filling. Next time I’ll try adding some cooked macaroni or a cubed baked potato.
