Slow Cooker Pulled Pork from RED GOLD®

Overnight, our overnight marinade of brown sugar, salt, and spices flavors the pork tenderloin. All you have to do in the morning is put the pork and diced tomatoes in your slow cooker. Serve the shredded sweet-and-savory pork on sliders for a party or on sandwich buns for a family.

Ingredients

  1. ¼ cup brown sugar
  2. 2 tablespoons kosher salt
  3. 2 tablespoons paprika
  4. 1 tablespoon black pepper
  5. 1 teaspoon dried thyme
  6. 2 teaspoons ground coriander
  7. 1 tablespoon dry mustard
  8. 2 teaspoons fennel seed, crushed
  9. 2 teaspoons garlic powder
  10. 1 (3 pound) pork tenderloin
  11. 1 (28 ounce) can RED GOLD® Crushed Tomatoes
  12. 1 (14.5 ounce) can RED GOLD® Diced Tomatoes

Instructions

  1. In a small bowl combine all the spices. Rub the pork with about 6 to 8 tablespoons of the dry mixture; reserve the rest. Wrap the pork with plastic and refrigerate overnight.
  2. Place the pork, fat side up in a slow cooker. Add the crushed tomatoes and diced tomatoes. Cover and cook on low for 8 hours.
  3. Remove pork and shred with two forks. Add pan juices as needed to keep pork moist.

Cooked for so long in that crock pot. I couldn’t get it as tender as it should be! Still chewy!

Not a bad recipe. Too “tomatoey” for our taste. Will make again but use vegetable broth for the liquid in the crock pot.
