Sheet Pan Chicken Breast with Feta and Vegetables

This Campbell’s chicken and broccoli casserole has a simple to make cheesy sauce. Bake until well heated and serve with hot noodles or biscuits.

Ingredients

  1. 1 tablespoon vegetable oil
  2. 2 pounds boneless chicken breast cut into 1-inch cubes
  3. 12 ounces mini bell peppers, halved lengthwise and seeded
  4. 1 medium white onion, quartered
  5. ½ cup Italian-style salad dressing
  6. 6 ounces crumbled feta cheese
  7. 2 teaspoons dried oregano

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C). Lightly oil a sheet pan.
  2. Spread out chicken, peppers, and onion across the sheet pan. Sprinkle with Italian dressing, feta cheese, and oregano; combine gently.
  3. Bake in the preheated oven until chicken is no longer pink in the center and the juices run clear, 20 to 25 minutes. An instant-read thermometer inserted into the center of a chicken breast should read at least 165 degrees F (74 degrees C).

I am addicted to this stuff! We eat a lot of chicken breast as a rule anyway and this is a great, easy variation while still keeping calories under control. In addition to the peppers and onions I like to add cauliflower, broccoli, mushrooms, pretty much any you like. I cut up the chicken and veggies and mix everything in a bowl then spread out on the pan. I also use fat-free Italian dressing. Even better the next day.

Very flavorful and super easy to make! I used red onions (as pictured, but not stated in the recipe). I also added mushrooms. I used Feta and mozzarella cheeses. I served over rice. My husband enjoyed it. My son said, “Peppers are weird” but he liked the flavor.

I made this recipe as written, however I did increase oven to 400, and after 20 minutes I broiled for four minutes, since husband doesn’t care for super juicy chicken. Served with warmed Pita, shredded lettuce, and drizzled tzatziki! Thank you for the recipe! Super easy and fast!

Made this tonight without the feta (didn’t have any on hand) and used liquid Kraft Italian Dressing with additional spices like pepper, seasoning salt, garlic and Italian seasoning. Also added cut up potatoes and broccoli, mixed it all together in a bowl then added to sheet pan to roast everything mixed together.I did need to bake a bit longer though, 35 mins instead of 25. It was sooo delish!! Mmmm

This was SO good and so easy! I will definitely be making this again. The whole family ate it up! I added more dressing to cook it in and used about half the feta. I only had red onion, but I thought it added nice color to the dish. I served with choice of white rice or Alfredo noodles.Thank you for this great recipe!
