Sensational Turkey Noodle Soup

I have a fantastic idea for your leftover turkey! It can be used with a few basic ingredients to create a spectacular soup that tastes fantastic. Even though it’s simple to make, you can be sure that after just one bite, this recipe will become a staple on soup nights.

Ingredients

  1. 3 ½ cups Swanson® Chicken Broth or Swanson® Natural Goodness® Chicken Broth or Swanson® Certified Organic Chicken Broth
  2. 1 medium carrot, peeled and sliced
  3. 1 stalk celery, sliced
  4. ½ cup uncooked medium egg noodles
  5. 1 cup cubed cooked turkey or chicken

Instructions

  1. Heat the broth, 1/8 teaspoon black pepper, carrot and celery in a 3-quart saucepan over medium-high heat to a boil.
  2. Stir the noodles and turkey in the saucepan. Reduce the heat to medium. Cook for 10 minutes or until the noodles are tender.

This was a great soup after Thanksgiving — when you are tired of cooking and just want to use leftovers. I used Penne pasta, added quarter of an onion (diced), a couple of shakes of garlic powder, a couple of shakes of oregano and basil, and teaspoon of pepper. Loved it!

A good start to a great soup! I doubled the veggies adding some onion, cooked low fat sausage in it (rather than the turkey). Very easy and good!

I gave it a three because I’m just using it as a guide – I added the following ingredients after changing the amount to six servings. 2-1/4 stalks celery, chopped 3 cloves garlic, chopped 1/4 teaspoon ground black pepper 1/4 teaspoon ground dried sage 1/4 teaspoon dried thyme 1/2 teaspoon dried rosemary
