Savory Vegetarian Quinoa

  4.9 – 7 reviews

I’ve been trying with vegetarian food with quinoa. This was a last night’s creation, and it was delicious! I wanted to keep this recipe and pass it along to others. For added health advantages, I added some sliced avocado and chia seeds to mine.

Additional Time: 5 mins
Total Time: 56 mins

Yield: 8 servings

Ingredients

  1. 2 tablespoons extra-virgin olive oil
  2. 3 carrots, chopped
  3. 1 onion, chopped
  4. 4 large mushrooms, chopped
  5. 4 cloves garlic, minced
  6. 4 cups savory vegetable broth
  7. 2 cups quinoa
  8. 1 tablespoon soy sauce
  9. 1 teaspoon ground ginger
  10. 2 cups baby kale

Instructions

  1. Heat oil in a large pot over medium heat. Add carrots, onion, and mushrooms; cook and stir until softened, 5 to 7 minutes. Add garlic; cook and stir until fragrant, about 1 minute.
  2. Pour broth into the pot; bring to a boil. Add quinoa, soy sauce, and ginger. Reduce heat and simmer until quinoa is mostly tender, about 17 minutes. Add baby kale; cook until wilted, about 3 minutes. Remove from heat and let stand until quinoa absorbs remaining cooking liquid, about 5 minutes.
  3. Substitute baby spinach for the baby kale if desired.

This recipe was very easy to make and extremely delicious. I just started vegan within the last two weeks and this will definitely be one of my go to meals!!

Wow. Wow. When I saw this recipe, I was doubtful. How could a recipe with so few ingredients, spices, and reviews be any good? Especially with the particuarly combo with the carrots, mushrooms, and quinoa I did not think it would be my dish. However, it turned out to be a very simple, but tasty dish. It was a great dish to have for lunch leftovers for multiple days. Highly recommend and highly recommend keeping it simple. Added to my top recipes. Not as fancy or flavorful as those dishes, but the simplicity and comfort of the dish makes it a great everyday, filling, lunch.

This was surprisingly good. I LOVE one pan meals.i debated at first on making this as I thought the ingredients were odd…carrots and the mushrooms to me doesn’t work. In the end it tasted good. I added some Italian seasonings when cooking the vegetables. It could benefit from more soya sauce and additional seasonings..but overall good.
