Sweet potatoes in particular are my favorite roasted veggie. Imagine my astonishment when I learned how quickly and deliciously they cook in an air fryer. You might need to alter the duration or temperature because each air fryer’s capacity and performance are unique. You may easily change the spice on these sweet potatoes to be plain and simple or sweet and sour. You can use as much or as little of the recommended ingredients, or you can create your own seasoning blend!

Ingredients

  1. ¼ cup thinly sliced rhubarb
  2. 1 teaspoon brown sugar
  3. 3 ounces gin
  4. 1 (12 fluid ounce) can lemon-flavored seltzer water

Instructions

  1. Muddle rhubarb and brown sugar in a mixing glass until crushed.
  2. Add gin and stir to dissolve sugar. Strain into 2 ice-filled Collins or rocks glasses. Top with seltzer.

A light and refreshing cocktail, perfect for hot summer days. This has a very light rhubarb flavor, so next time I might double the amount of rhubarb, or let the mixture sit for a while before using. This would also be good mixed with strawberry sparkling water or tonic.
