Red Raspberry Cheesecake Spread

The chicken is always moist and falls off the bone when I cook these honey orange glazed chicken drumsticks for parties and Boxing Day feasts. People always order seconds because they adore the glaze! If you can’t acquire the legs from your butcher, you could quarter 2 chickens, but I think the legs are more flavorful and cost-effective. Serve this recipe over aromatic rice and roasted asparagus or carrots that have been dilled.

Ingredients

  1. 2 (8 ounce) packages cream cheese, softened
  2. 1 cup powdered sugar
  3. 1 teaspoon vanilla extract
  4. 3 tablespoons seedless red raspberry jam
  5. 2 tablespoons miniature semisweet chocolate chips
  6. 1 pint fresh raspberries for garnish (Optional)
  7. 1 (7.2 ounce) package Original Snack Factory® Pretzel Crisps®

Instructions

  1. Place cream cheese in a food processor and pulse until smooth, 8 to 10 pulses. Add powdered sugar and vanilla. Process again until smooth. Place half of the mixture into a small glass bowl or other small clear container.
  2. Place jam in a microwaveable bowl; microwave until smooth and liquefied, about 10 seconds. Stir. If not completely liquefied, microwave another 5 seconds.
  3. Spread liquefied jam evenly over the top of the cream cheese mixture. Spread over the entire surface to the edges.
  4. Carefully spread remaining cream cheese mixture on top of the jam. Sprinkle semi sweet chips.
  5. Refrigerate at least 3 hours.
  6. Garnish with raspberries. Spread on Pretzel Crisps® or use the spread as a dip.
