Quaker® Banana Bread Overnight Oats

These simple overnight oats are made with all the mouthwatering warm flavors of banana bread. In a flash, bananas are added for the flavor of banana bread.

Ingredients

  1. 3 cups skim or 1% milk
  2. 2 tablespoons honey
  3. 2 tablespoons brown sugar
  4. 1 teaspoon vanilla extract
  5. ½ teaspoon ground cinnamon
  6. ¼ teaspoon ground nutmeg
  7. ¼ teaspoon salt
  8. 3 bananas, divided
  9. 3 cups (750 mL) Large Flake Quaker® Oats
  10. ¼ cup chopped toasted pecans
  11. 1 cup Plain or vanilla non-fat yogurt

Instructions

  1. Stir together milk, honey, brown sugar, vanilla, cinnamon, nutmeg and salt; stir in oats. Cover and refrigerate overnight.
  2. Mash two bananas and stir into oatmeal. Slice remaining banana. Divide oatmeal evenly among bowls or small Mason jars; top with sliced banana, pecans, and yogurt (if using).
  3. Tip: Top with blueberries, raspberries or blackberries if desired.
  4. Tip: Use non-dairy substitutes, such as soy or almond milk if desired.
  5. Tip: Stir in 1/2 tsp (2 mL) chia or hemp seeds before refrigerating if desired.

It was overly sweet. I think possibly this could be because my measurements may have been off a bit. I was trying to divide all the ingredients so that I was making only a single serving. Either way I think it definitely embodies dessert for breakfast.

I have followed this recipe and it is my go to base for overnight oatmeal based on preferences. I use less cinnamon and no nutmeg. I do add a little vanilla. I double the recipe and have breakfast for the week. We prefer walnut and blueberry. I could it it everyday and don’t tire of it.

Just like a loaf of banana bread! I halved the recipe for a very very full 500mL jar and did not add yogurt in the morning.

With any of these, texture can be an issue, but my 3yo and I really enjoyed this! It is easy to make (especially with my kid) and can be “dressed up” with other toppings that you have on hand. We used blue berries and it was great. Next time I might up the cinnamon for my personal taste, but overall a good recipe!

So yummy! We used peaches in place of bananas and added a tad more sugar. Our whole family liked it!
