Panini Sandwiches

This recipe for meatball Bourguignon is a hit with my household. Despite the lengthy cooking time, this recipe is one of my favorites and is fairly easy to prepare. This tastes great when it’s put over pasta, rice, biscuits, or potatoes. Enjoy!

Ingredients

  1. 4 Sister Schubert’s Dinner Yeast Rolls, split
  2. 4 slices roast turkey or ham
  3. 4 slices Swiss, Monterey Jack, or Gruyere cheese
  4. 8 small slices red onion
  5. 1 cup fresh spinach leaves or several fresh basil leaves (Optional)
  6. Salt and freshly ground black pepper
  7. Butter
  8. ¼ cup mayonnaise
  9. 2 finely chopped sundried tomatoes
  10. Salt and freshly ground black pepper

Instructions

  1. Preheat grill pan or panini machine to medium heat.
  2. Spread center of each roll with 1 tablespoon mayonnaise. Assemble sandwiches with remaining ingredients, except butter. Season with salt and pepper.
  3. Spread small amount of butter on top and bottom of each roll; place sandwich either in pan on onto panini machine and grill. Cook 5 to 7 minutes.
  4. (If using a pan, press sandwich down with a pan lid. Cook sandwiches about 3 to 4 minutes on each side or until bread is toasted.)
  5. For mayonnaise: whisk all ingredients together in small bowl. Refrigerate until ready to use.
  6. Note: This recipe can be easily doubled or tripled.

I went with smoked ham and Swiss cheese and thought these were pretty good. I loved the sundried tomato mayo. If you use dry-packed tomatoes (instead of oil-packed), you will want to rehydrate them in boiling water for 5-10 minutes. The only thing I would change next time is the bread. I wasn’t a big fan of the Sister Schubert’s rolls – they have an odd sweetness to them. These are small sandwiches due to the size of the rolls, about slider size, so take that into consideration. I made them a second time with a sriracha mayo instead of sundried tomato, and they were just as tasty.

The only change I made was small, I combined both the ham and turkey, otherwise I kept it the same, it was excellent.

I made this vegan by using vegan mayo & Daiya-brand provolone & Tofurkey-brand cheese & meat. The bread I used was La Brea “French dinner rolls” found in our grocery bakery. I set the sandwiches in a large cast iron skillet heated to medium & placed a second (slightly smaller) cast iron skillet in top of them. They got 3 1/2 minutes each side. Even tho the tops of the rolls were round, this worked well & they were delicious.

This went over well with everyone. I switched the bread to French Baguettes, delicious canvas for the mayo! I added garlic salt and Cavenders no salt to the mayo mix, and combined with everything else it rocked. I give it 4 stars because standing alone I don’t think it would have been as good.

Loved this sandwich, quick and easy to make. I used whole grain ciabatta bread, Colby and Monterey Jack cheese, ham, turkey and spinach leaves. I didn’t try the sun dried tomato mayonnaise but I will on my next shot. My eleven year old said this is a keeper and told me to save it to the favorites.

I LOVED THE IDEA OF THIS PANINI!!I USED WHAT I HAD ON HAND i USED A LOAF OF HOMEMADE BREAD INSTEAD OF ROLLS,I USED SWISS CHEESE,ADDED SOME ROASTED RED PEPPERS AND USED TURKEY AND HAM!! DELICIOUS!! MY HUSBAND AND I REALLY ENJOYED THIS! I LOVE TRYING DIFFERENT RECIPES AND GETTING NEW IDEAS THANK YOU FOR SHARING!!!
