Mom’s Homemade Sofrito

This is a white cake with holes in it that you fill with heated fruit-flavored gelatin and chill. A whipped topping icing is on it.

Ingredients

  1. 3 pounds onions, coarsely chopped
  2. 3 red bell peppers, seeded and coarsely chopped
  3. 3 green bell peppers, seeded and coarsely chopped
  4. 1 bunch fresh cilantro
  5. 2 cloves garlic
  6. 1 teaspoon water, or more as needed (Optional)

Instructions

  1. Blend onions, red bell peppers, green bell peppers, cilantro, and garlic in a blender, in batches if necessary, into a smooth paste. If paste appears very thick, thin with a little water.

Made Mexican rice with it, a dose of tomato paste concentrate, and chicken bullion. Very good results. I would add 1 tsp of salt to the recipe.

This is our second batch. I’m not Hispanic but my friend has been sharing his heritage with me. I have him the first batch that we had leftover and his mother used all of it in, like, 2 weeks, preferring it over the store-bought version they already had. To get the color shown in the photo, we reduced the amount of onions by about half. This made 2 quarts of sofrito and lots of leftover onion pieces (which I froze for other cooking). Smells amazing! Froze nicely in ice trays. The other chef probably would use 2 cubes and he is *very* generous with the amount of garlic and sofrito he adds to…everything. Lol I personally hate cilantro, so we didn’t use the entire bunch…about half. This actually tastes and smells fine to me. The habichuelas were amazing!

I have not made this yet, but had to add a rating in order to submit this review. 3 pounds of onions??? Is this correct?? I think it should be 3 onions, and when I make it, gonna add three or four romano tomatoes.

My mom used to make home made sofrito all the time and this tasted almost like hers. (I did not use cilantro because I did not have any and I was in a pinch) but other than that, the flavor and the smell was really good.

Awesome! Use this in any recipe that calls for sautéing a bit of onion and/or garlic. It adds a new dimension to any dish. I froze most of it in silicone mini muffin moulds. Once frozen, just pop them in a resealable bag to grab when you need them. Thank you for the recipe.
