Loaded Reuben Totchos

When do appetizers go beyond being mere starters? When Reuben gives totchos a makeover, that’s when!

Ingredients

  1. 1 (32 ounce) package frozen fried potato nuggets
  2. 6 ounces corned beef, chopped (1 cup)
  3. ½ cup sauerkraut, drained
  4. 1 cup shredded Swiss cheese (4 oz.)
  5. 1 cup shredded Colby and Monterey Jack cheese (4 oz.)
  6. ½ cup Thousand Island salad dressing
  7. 1 tablespoon spicy brown mustard
  8. 2 tablespoons chopped green onion
  9. ¼ teaspoon caraway seeds, toasted

Instructions

  1. Preheat the oven to 450 degrees F (230 degrees C). Line a baking sheet with foil.
  2. Spread potato nuggets on prepared baking sheet. Bake until golden brown, 28 to 32 minutes.
  3. Top potato nuggets with corned beef, sauerkraut, Swiss cheese, and Colby and Monterey Jack cheese. Bake until cheese is melted, 5 to 8 minutes.
  4. Drizzle with Thousand Island dressing and mustard. Sprinkle with green onion and caraway seeds.
  5. Swap out the usual tortilla chips for frozen potato nuggets, then top with all the makings of a Reuben sandwich. (Just in time for St. Paddy’s Day or game day.)

LOVED this!! Only omitted brown mustard and caraway seeds as I didn’t have either and I don’t think they were missed. Pretty easy and great as an appetizer or even a unique meal (potatoes, meat, onions! ). Did I mention we loved this?? Will make again! Thanks Juliana Hale!!

These flew off the table! They are wonderful. I skipped the onions and seed however.
