Ingredients
- 1 (12 ounce) package turkey bacon
- 5 pounds russet potatoes, peeled and diced
- 1 (32 ounce) carton Swanson® Unsalted Chicken Stock
- ¼ cup low-fat sour cream
- ¼ cup low-sodium dry ranch dressing mix
- ¾ cup shredded nonfat Cheddar cheese
- 1 tablespoon chopped fresh chives
Instructions
- Cook turkey bacon in a skillet over medium heat to desired crispness; crumble.
- In a large stock pot, combine potatoes and Swanson® Unsalted Chicken Broth. Boil potatoes and broth for about until potatoes are soft, stirring occasionally, 15 to 20 minutes. Remove from heat. Do not discard broth. Add sour cream and ranch seasoning mix. Beat potatoes with a mixer or a mashing utensil until potatoes are mashed to desired consistency and ingredients are well combined, 2 or 3 minutes.
- Stir in bacon, Cheddar cheese, and chives.
- You can use regular bacon if turkey bacon is not preferred, but do look for a low-sodium bacon. Also a store brand ranch dressing mix, check for the sodium content.
- To make your own low-sodium ranch mix: Stir together 2 tablespoons powdered buttermilk blend for baking, 1 tablespoon minced onions, 1 tablespoon dried parsley, 1/2 tablespoon dried minced chives, a pinch of low-sodium salt, 1/2 teaspoon garlic powder, 1/4 teaspoon white pepper, 1/8 teaspoon paprika, and 1/8 teaspoon dried dill. Pulse mixture in a coffee grinder.

I made this recipe pretty much as is but used actual bacon. I missed the milk for whatever reason. I added a bit of butter but still it felt it was missing the milk. As of everything else, it is good. I will make it again but will definitely add the milk. It is good as a main course for dinner and loved how quickly it can be put together.
I found this recipe to be an excellent base but I did have to tweak it. For one, I do not cook with a lot of salt but I had to add 1 tsp salt. I also added 3/4 tsp black pepper. Lastly, I made for Christmas so wanted it to be a bit decadent and added 1/4 cup melted butter.
my husband and I did a test run on this because we were planning to serve it for Easter dinner. It was delicious! We definitely recommend this recipe!

Great recipe! Cooked my potatoes in pressure cooker to be done in 16 minutes rather than boiling for a long time. Also added more bacon, more cheese and sour cream, but it was awesome
My husband isn’t huge on the bacon bits or turkey bacon in his spuds so I did skip the bacon but I made it like the rest said the first time and everyone loved it. On my second go I decided to make it similar to one of my other favorites with not peeling the potatoes and it was perfect either way. I think my kids liked the skins in it version a little more but both are perfect and are now a family favorite. Even my most picky eater loves the potatoes and wants them all the time. We prefer with Salisbury steaks or our Brown sugar meatloaf. Enjoy!

These potatoes were so rich and flavorful! If you’ve made loaded mashed potatoes in the past and have been left flat. Try these!
So I made these Loaded Potatoes but only used about 5 medium/large potatoes. I added half that ranch seasoning and thought it tasted amazing! So I mistakenly added the rest…. overwhelming! Whoops! Haha but besides my mistake these potatoes were great and flavorful. My favorite part was probably the boiling in the chicken broth.
So flavorful! I didn’t use the low sodium options, but followed the rest to a Train, and was very impressed.
Decided last minute to make supper for my family. This was my first time making mashed potatoes home made! It was the best I’ve ever had!!! Going to use over and over!!!!!
I made as written except that I took a shortcut by using real bacon bits instead. I would have preferred the turkey bacon but I didn’t have any on hand and decided to make this last minute. I LOVED the additional of the dry ranch and I loved the fact that no milk was needed. Swanson broth has such a rich flavor that I didn’t even miss the butter either. Thanks for a great recipe Missy!
