Try this fast orzo recipe in the Instant Pot with fresh spinach and portobello mushrooms for a weeknight side dish or light main dish.

Ingredients

  1. ¾ cup chicken broth
  2. ½ cup tricolor orzo
  3. 1 tablespoon butter
  4. 2 cloves garlic, minced
  5. ½ cup julienned fresh spinach
  6. 2 ounces sliced portobello mushrooms
  7. ½ teaspoon salt
  8. ¼ teaspoon ground black pepper

Instructions

  1. Combine chicken broth and orzo in a multi-functional pressure cooker (such as Instant Pot); stir to combine. Close and lock the lid. Select high pressure according to manufacturer’s instructions; set timer for 5 minutes. Allow 10 to 15 minutes for pressure to build.
  2. Release pressure carefully using the quick-release method according to manufacturer’s instructions, about 5 minutes. Unlock and remove the lid. Switch to Sauté function. Stir in butter, garlic, spinach, and mushrooms. Season with salt and pepper.

I don’t have an instant pot so cooked the orzo like rice in the broth. Then I added it to a sauté pan with all the other ingredients already cooked and ready. It was a nice change from rice. I doubled everything but used 8 oz of fresh mushrooms (4x). Yummy!

Made this 2x. My family really likes it. I recommend doubling the recipe. I have only roughly cut the spinach, since it wilts during the saute and I like larger pieces. Quick and easy.
