Ingredients
- ¾ cup chicken broth
- ½ cup tricolor orzo
- 1 tablespoon butter
- 2 cloves garlic, minced
- ½ cup julienned fresh spinach
- 2 ounces sliced portobello mushrooms
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
Instructions
- Combine chicken broth and orzo in a multi-functional pressure cooker (such as Instant Pot); stir to combine. Close and lock the lid. Select high pressure according to manufacturer’s instructions; set timer for 5 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure carefully using the quick-release method according to manufacturer’s instructions, about 5 minutes. Unlock and remove the lid. Switch to Sauté function. Stir in butter, garlic, spinach, and mushrooms. Season with salt and pepper.

I don’t have an instant pot so cooked the orzo like rice in the broth. Then I added it to a sauté pan with all the other ingredients already cooked and ready. It was a nice change from rice. I doubled everything but used 8 oz of fresh mushrooms (4x). Yummy!
Made this 2x. My family really likes it. I recommend doubling the recipe. I have only roughly cut the spinach, since it wilts during the saute and I like larger pieces. Quick and easy.

I loved this! I was looking for a recipe to use up 2 ounces of mushrooms and I found this. There are a handful of recipes that I make more than once and this one’s going into my rotation. As a side it makes 4 very tasty portions, thanks for the recipe.
