Honey Lemon Glazed Salmon with Spinach Saute

Ingredients

  1. 1 lemon
  2. ¼ cup honey
  3. 1 pound salmon fillets
  4. Freshly ground Spice Islands® Black Pepper Adjustable Grinder
  5. 1 ½ teaspoons Mazola® Corn Oil
  6. ½ cup thinly sliced red onions
  7. 2 cloves garlic, thinly sliced
  8. 1 (5 ounce) package fresh baby spinach
  9. ¼ cup dry white wine
  10. ¼ teaspoon Spice Islands® Crushed Red Pepper
  11. ⅛ teaspoon salt
  12. 1 tablespoon chopped, toasted pine nuts

Instructions

  1. Preheat oven to 450 degrees F. Grate zest from lemon; set aside. Squeeze 1 tablespoon lemon juice into a small bowl. Add honey and mix well. Line a baking sheet with foil; spray foil with cooking spray. Place salmon fillets on baking sheet. Generously season with black pepper. Drizzle with half of the honey mixture. Roast salmon for 10 to 12 minutes or until fish is lightly browned and flakes easily. Brush on remaining glaze as needed. For a browner glaze, broil on HIGH the last few minutes of cooking.
  2. Heat oil in a large nonstick skillet over medium-high heat. Add onions and garlic and saute 3 to 5 minutes. Add spinach and white wine. Continue to saute until spinach is wilted and most of the liquid has evaporated. Stir in 1 teaspoon lemon zest, crushed red pepper and salt. Divide spinach evenly on top of salmon fillets; sprinkle with pine nuts. Serve immediately.

I am genuinely sorry, but 3 stars is generous here. The salmon had no distinctive taste. The spinach saute was equally bland. I reviewed many salmon/spinach recipes for this dinner with my wife and gave no serious consideration to anything with less than 5 stars. Terribly disappointed.

Excellent. Excellent. Excellent. I served it on a bed of pasta and will admit I had no piñon nuts so copped up cashews since they have about the same texture. Next time I will look for piñon nuts.

Made it just as the recipe said except I used apple juice instead of the white wine and almonds instead of pine nuts. It was delicious and we will definitely have it again.

Really enjoyed this. I had about 8 oz of salmon but used the full amount of the spinach mixture,and I was glad I did because there would not have been enough otherwise. I subbed almonds for the pine nuts since that’s what I had on hand. Quick and easy and so flavorful, yum!

Delicious! With 3lbs of salmon, we used 1/2C honey and 3T of lemon juice and it was more than enough. We made 10oz of spinach and doubled the other topping ingredients, using walnuts instead of the pine nuts.

This was good, but not fantastic. I doubled the spinach mixture, per reviews, and lowered the amount of honey. Maybe I lowered it too much because it wasn’t sweet at all and not much flavor. I didn’t like the wine flavor with it.. I would prefer vegetable broth, I think. It definitely needed to have double the spinach because we used that as our veggie.

The marinade was a little too sweet. Might add ginger or something to cut it next time, but we eat a lot of fish and this was a nice change from my usual recipe. The spinach was great and nice to have something different.

After reading the reviews I used the juice of one small lemon & 1 Tbs honey for the salmon to reduce the sweetness. It was wonderful & a hit with my boys.

I loved the sweet flavor of the salmon. Was super filling too. I did substitute orange juice in place of the lemon juice and left out the lemon zest. Also forgot to put the salt in. Tasted great without though. Thanks for sharing

Great quick and easy recipe. I adjusted for the thickness so as to not over cook. Also I heated the remaining sauce and poured over just before serving.
