Hawaiian Loco Moco

This particular variation of the native food, Hawaiian loco moco, is my favorite. On the major island of Hawaii, I consumed this at a sports bar-cafe. Typically, Spam is used to manufacture it. Additionally, you may prepare this with leftover rice, cooked burgers, and sauce in a jar.

Ingredients

  1. cooking spray
  2. 1 pound ground beef chuck
  3. 1 cup sliced onion
  4. ½ cup water
  5. 1 cup sliced mushrooms
  6. 1 (12 ounce) jar brown gravy (such as Heinz)
  7. 4 eggs
  8. 4 cups cooked rice

Instructions

  1. Grease a large skillet with cooking spray and heat over medium heat.
  2. Divide ground chuck into four equal portions; form into patties.
  3. Fry patties in the hot skillet until they begin to firm, are hot, and are slightly pink in the center, about 6 minutes per side. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C). Remove patties to a plate, retaining drippings in the skillet.
  4. Stir onion and water into reserved drippings. Reduce heat to low and cook until onion is slightly softened, about 5 minutes. Add mushrooms; cook and stir until mushrooms are cooked through, about 5 minutes more.
  5. Pour gravy over onion-mushroom mixture; stir. Cook until gravy is hot, about 5 minutes. Gently lie patties into gravy; simmer until reheated through.
  6. While patties simmer in gravy, grease a separate skillet with cooking spray and heat over medium heat. Fry eggs in the hot skillet until whites are opaque, but yolks remain runny, 2 to 3 minutes.
  7. Divide cooked rice between four plates. Top each rice portion with a beef patty and cover each patty with an egg. Pour gravy equally over each portion.

Huge hit for everyone! Only change I made was seasoning the burgers with some McCormick Montreal steak and adding extra gravy. Served with brown rice and grilled pineapple.

I was looking for a new way to use spam( a good way to stretch the food budget). This will definitely be a keeper! I did use a can of low fat spam cut into 8 slices. This took a little less time to cook seeing how the spam only needed to be browned in some non stick spray. There was not any pan drippings so I added a little butter to sauté the onions, water and then the mushrooms ( which I doubled, we are mushroom lovers). I also used the jarred beef gravy, but I used two. My family was a little skeptical at first, but agreed we will be making it again. And the hubby requested two eggs for next time.
