Ground Beef and Chopped Cabbage

Ingredients

  1. 1 tablespoon olive oil
  2. 1 large onion, chopped
  3. 1 ½ pounds ground beef
  4. 1 teaspoon garlic powder
  5. ½ teaspoon red pepper flakes
  6. ½ teaspoon Italian seasoning
  7. salt and pepper to taste
  8. 1 small head cabbage, chopped
  9. 2 (14.5 ounce) cans diced tomatoes
  10. 1 (14.5 ounce) can tomato sauce

Instructions

  1. Heat olive oil in a large heavy pot or a 6-quart Dutch oven over medium heat. Cook and stir onion in hot oil until translucent, about 5 minutes.
  2. Break ground beef into small chunks and add to the pot; cook and stir, continuing to break the beef into smaller pieces, until the beef is completely browned, 5 to 7 minutes.
  3. Season beef mixture with garlic powder, red pepper flakes, Italian seasoning, and a dash of salt. Stir cabbage, diced tomatoes, and tomato sauce with the beef mixture; bring to a boil, reduce heat to low, and cook mixture at a simmer until cabbage is fork-tender, about 25 minutes. Season with salt and pepper.

I made it as originally written, and then put a spin on it. I cooked the onion in with my ground beef. Drained and added a package of taco seasoning, cabbage, a can of petite diced tomatoes, and about half of a can of water or so. Bring to a slow boil reduce heat slightly and cook until cabbage is tender. Served with a pan of cornbread and it was absolutely delicious! My family literally scraped the pot clean!

We made this with a 1 lb package of ground beef, and 1/2 large head of cabbage because that’s what we had. Followed others suggestions: added 2 cans Rotel instead of the diced tomatoes and doubled the spices. No tomato sauce because we did not have any. It was not soupy, and not a big tomato sauce presence. We liked it that way, but if you’re serving it over a starch (we did not) you might need some more liquid. Hubs had his over noodles, I did low carb and threw cheese on top of mine, sour cream on the side. We loved it this way, and will be making it again.

Great starter recipe. I used fresh garlic instead of garlic salt, only one can of diced tomatoes, and omitted the tomato sauce. Also added some frozen summer squash from last year’s garden just because it needed to be used. Be sure and at least triple the Italian seasoning. Hubby really likes it.

I’ve made this dish for years, or something similar. I use Rotel instead of regular diced tomatoes & I add some Worcestershire sauce. It is delicious!

I cheated so bad…pre chopped onions, and cabbage from produce dept. made it so much easier for a quick meal. Left out red pepper flakes but added a red pepper which was…you guessed it…pre chopped. I served over mashed potatoes and sprinkled a bit of parmesan cheese on top. Delicious. Thank you for sharing.

My family loved the recipe. I cut down the diced tomatoes to 1 and 1/2 cans and didn’t think it was soupy at all. I wish I had looked at what goes into Italian seasoning first because I’m not a fan of rosemary and the scent of it was a bit off putting. However the taste wan’t affected by it (which is funny). Anyway, I will likely leave that out next time and follow others’ advice for seasoning. Great, cheap and comforting meal overall!! And it tastes better the next day too!

Left out the tomato sauce bc I don’t like my food too tomato-y. Used medium salsa I had instead of canned tomatoes. Great substitute! Chopped the cabbage super fine to imitate noodles. Topped with chopped green onions for extra kick. Really enjoyed this low carb dish.
