Grilled Southwestern Shish Kebabs

The tasty Black Ginger Cocktail is made with fresh blackberries, spiced rum, sweet and sour mix, and a little bit of ginger beer. It is the house specialty drink of the Escondite in Los Angeles.

Ingredients

  1. 3 cups Mexican lager (such as Negra™ Modelo)
  2. ¾ cup coarsely chopped white onion
  3. ¾ cup chopped cilantro
  4. ¼ cup lime juice
  5. ¼ cup minced garlic
  6. 1 tablespoon hot salsa
  7. 1 ½ teaspoons red pepper flakes
  8. ½ teaspoon kosher salt
  9. ½ teaspoon freshly cracked black pepper
  10. 4 pounds beef tenderloin, cut into 1-inch cubes, or more as needed
  11. 1 fresh pineapple, cored and cut into 1-inch pieces
  12. 2 cups coarsely chopped red onion
  13. 2 green bell peppers, cut into 1-inch pieces
  14. 12 white mushrooms
  15. 12 cherry tomatoes
  16. (12-inch) skewers, soaked in water for at least 30 minutes

Instructions

  1. Combine lager, white onion, cilantro, lime juice, garlic, salsa, red pepper flakes, salt, and pepper in a large bowl. Mix together until marinade is well blended. Add beef carefully. Cover with plastic wrap and refrigerate, 6 hours to overnight.
  2. Thread the marinated beef, pineapple chunks, red onion chunks, green bell pepper pieces, mushrooms, and cherry tomatoes alternately through skewers. Place shish kebabs on a baking sheet or jelly roll pan.
  3. Preheat grill for medium heat and lightly oil the grate. Grill shish kebabs until beef is firm and reddish-pink and juicy in the center, about 4 minutes per side.
  4. Do not wash the mushrooms. Instead, use a damp paper towel and gently scrub them.
  5. Do not marinate for more than 12 hours.
  6. To just flavor the beef rather than tenderize, marinate for as little as 20 minutes, up to 2 hours.

These turned out okay but for as much that went into the marinade, there wasn’t a lot of flavor to the meat. I marinated it for 10 hours so that wasn’t the problem. It definitely needs more salt and more red pepper flakes. These were very colorful and pretty. Overall good recipe but I recommend adding more seasoning.
