Grilled Chicken Alfredo Flatbread Pizzas

A Panasonic Countertop Induction Oven (CIO) is used to prepare this chicken Alfredo flatbread with mushrooms. Thaw the dough overnight in the refrigerator to prepare it in advance.

Ingredients

  1. 1 (5 ounce) skinless, boneless chicken breast
  2. 2 tablespoons Italian dressing
  3. 1 (1 pound) loaf frozen bread dough, thawed
  4. ⅓ cup Alfredo sauce
  5. 1 (8 ounce) package shredded mozzarella cheese
  6. ½ cup sliced fresh mushrooms
  7. 3 slices bacon, cooked and crumbled (Optional)

Instructions

  1. Place chicken in a shallow bowl. Cover with Italian dressing and let marinate for 10 minutes. Slice chicken across the grain into 1/8-inch-thick pieces; set aside.
  2. Divide bread dough into 2 equal pieces. Roll each into a 9-inch circle.
  3. Spread Alfredo sauce evenly over each dough circle. Cover with 1/2 of the mozzarella cheese. Arrange chicken, mushrooms, and bacon on top. Sprinkle with remaining mozzarella cheese.
  4. Place 1 pizza in a Panasonic CIO. Press “Auto Cook” and select the “Frozen Pizza, 9-inch Size” setting. Allow pizza to cook until the timer goes off, about 13 minutes. Repeat with second pizza.

So quick and delicious! I made my own dough and it fit the entire pan so I used the 12″ pizza setting. I added a couple extra minutes because we like the cheese to be nice and golden brown. I was a little skeptical about putting the chicken on this raw, but it actually worked out really well and making it this way prevents the chicken from getting over cooked! I had a picture of it, but I think my toddler erased it when he was playing with my phone, haha! We will make this again trying different flavor combinations. Thanks for the recipe!

This turned out great! I’m vegetarian so I made it without the meat but I would definitely make this again. Editing to add that I’ve now made this pizza 3 times because we love it so much!
