Sweet and sour shrimp stir-fry with Asian influences.

Ingredients
- cooking spray
- 2 medium sweet potatoes, sliced into 1/4-inch wedges
- 1 tablespoon olive oil
- ½ teaspoon kosher salt, divided
- ¼ teaspoon ground black pepper, divided
- ¼ cup Dijon mustard
- 2 tablespoons honey
- ¼ teaspoon cayenne pepper
- 5 cups broccoli florets
- 4 (5 ounce) salmon fillets
- 2 tablespoons everything bagel seasoning
- 2 teaspoons soy sauce
Instructions
- Preheat the oven to 425 degrees F (220 degrees C). Line a large, rimmed baking sheet with foil and coat lightly with cooking spray.
- Toss sweet potatoes with 2 teaspoons oil, 1/4 teaspoon salt, and 1/8 teaspoon pepper in medium bowl. Place on one half of the prepared baking sheet.
- Bake in the preheated oven for 5 minutes.
- While the potatoes are cooking, stir together Dijon, honey, and cayenne in a small bowl. Toss broccoli with remaining oil, salt, and pepper in a separate bowl.
- Remove potatoes from the oven. Add salmon to the other half of the baking sheet. Place 2 teaspoons of the mustard mixture on each salmon filet; brush evenly to coat, then sprinkle evenly with bagel seasoning. Add broccoli to the sweet potatoes. Return to the oven and bake until salmon flakes easily with a fork and the veggies are golden, about 12 minutes.
- Stir soy sauce into the remaining mustard mixture and drizzle over veggies.

It was great. I never knew you could cook sweet potatoes that quickly. The cayenne added just the right amount of heat. A healthy, tasty meal. It was a cooked perfectly in the 12 minutes. My salmon filets were not very thick though. Note that the potatoes go in 5 minutes early.
I just did the salmon portion and the topping was excellent.also added Old Bay seasoning. Baked at 400 for approximately 20 minutes.
Made it mostly as written and it was delicious!!! I never measure things, so guessed on spices. Timing for the cooking maybe a bit off. I cooked salmon and broccoli for 15. Next time I will cook sweet potatoes for 8, and then add other two ingredients for another 15-16. Gonna keep this recipe close at hand….
I made this for my daughter who came in from college and she just simply said……”WOW DAD, you can cook” I added extra cayenne and soy sauce. This recipe is hard to mess up. Oh and step 5, where it says 12 minutes, should be 15-18 minutes.
This is an easy to prepare meal for colder weather. I especially liked the sauce being slightly different on the vegetables versus the salmon with the addition of soy sauce. I didn’t like the topping as much as I thought I would, and there was too much sauce on the salmon, but I will definitely make this again and maybe adjust the ratio of sauce-tp-bagel topping.
Delicious BUT : In Step 5, 12 mins in oven is suggested. I wonder if that’s a typo, because I’ve made this recipe three times (it’s that good) ….trust me when I tell you 18 mins is best for the salmon, brocc, AND taters!
My teenage daughter who doesn’t like salmon and is a picky eater said she liked it! That is a win for me 🙂 I followed the recipe with the exception of only a sprinkling of cayenne. I used the convection setting on my oven at 425 and it took about 14 minutes for the salmon to be done to our liking.
Over the top excellent!! Followed the basic recipe with a change to no cayenne and replaced the bagel seasoning with Italian herbs and split the 5 cups broccoli with 50/50 of broccoli and cauliflower. This is going to be a definite make again with a bottle of Sauvignon Blanc!!! Colors and flavors worked the whole meal. Thank you

Wow — this recipe is so easy and so delicious. I was nervous to be cooking for my game night crew but this recipe could not be more perfect. Everyone loved it. . The flavors were great. The only thing I had to change and substitute for the Everything Bagel Seasoning. I could not find at the store so I used Mixed up Seasoning. .hope to find the Everything Bagel Seasoning on line.
This was my first try at baked fish and this dish did not disappoint. Will definitely try it again.
