  5.0 – 2 reviews

For a weeknight meal that the whole family will enjoy, use this recipe. Simply combine everything on a single 10×15-inch baking pan using the variations listed below or whatever you have on hand. Let your oven do the work after that.

Prep Time: 15 mins
Cook Time: 20 mins
Total Time: 35 mins
Servings: 4
Yield: 4 servings

Ingredients

  1. 1 ½ pounds boneless, skinless chicken thighs
  2. 1 pound tiny new potatoes, cut into 1-inch pieces
  3. 2 cups cherry tomatoes
  4. 2 teaspoons olive oil
  5. ¼ teaspoon salt, or more to taste
  6. ¼ teaspoon ground black pepper, or more to taste
  7. ½ cup pesto
  8. 1 tablespoon chopped fresh basil, or to taste

Instructions

  1. Preheat the oven to 425 degrees F (220 degrees C). Line a 10×15-inch baking pan with aluminum foil.
  2. Arrange chicken, potatoes, and cherry tomatoes in a single layer on the prepared pan. Drizzle with oil and sprinkle with salt and pepper.
  3. Roast in the preheated oven until vegetables are tender and chicken is no longer pink in the centers and juices run clear, 20 to 30 minutes. An instant-read thermometer inserted into the chicken should read at least 175 degrees F (79 degrees C).
  4. Serve with pesto and sprinkle with basil.
  5. You can use 1 1/2 pounds of any boneless meat, 1 pound any prepped starchy vegetables, 2 cups any prepped non-starchy vegetables, 1/2 cup any prepared sauce or relish, and any fresh herbs you like. Just be sure to adjust the cooking time depending on the meat you choose.
  6. For Southwestern Beef, use a 1-inch-thick flat iron steak, frozen sweet corn kernels, red or orange bell peppers (cut into 1/2-inch strips), pico de gallo, and cilantro leaves.
  7. For Barbecue Pork, use pork tenderloin (trimmed), sweet potatoes (cut into 3/4-inch chunks), fresh green beans (trimmed), barbecue sauce, and sliced green onion.

This was amazing. So easy but looks beautiful! The only change was not having skinless chicken thighs; used bone and skin on instead.

The sheet pan chicken recipe was excellent. Very flavorful! Made exactly as the directions were written. Trying the beef recipe next!
