Chocolate Chip Granola Cookies

The addition of granola to these traditional chocolate chip cookies is delectable.

Ingredients

  1. Crisco® Original No-Stick Cooking Spray
  2. ½ cup Crisco® Baking Sticks All-Vegetable Shortening
  3. 1 cup firmly packed brown sugar
  4. 2 large eggs
  5. 2 tablespoons milk
  6. 2 teaspoons vanilla extract
  7. 1 ¾ cups Pillsbury BEST® All Purpose Flour
  8. ¾ teaspoon salt
  9. ½ teaspoon baking soda
  10. 2 ½ cups prepared granola
  11. 1 cup semi-sweet chocolate chips

Instructions

  1. Heat oven to 350 degrees F. Coat baking sheets with no-stick cooking spray.
  2. Beat shortening and brown sugar in large bowl with electric mixer on medium speed until creamy. Beat in eggs, milk and vanilla. Combine flour, salt and baking soda in medium bowl. Add to egg mixture. Mix well. Stir in granola and chocolate chips. Drop by rounded tablespoonfuls onto prepared baking sheets.
  3. Bake 9 to 10 minutes or until bottoms are lightly browned. Cool 2 minutes. Remove to wire rack to cool completely.

I made these using Bare Naked Blueberry Lemon Cheesecake Granola, only 2 cups. Otherwise, i followed directions exactly. The cookies did not flatten out and were more cakey then I thought. But very good.

mines turned out like biscuits, i followed the recipe to the tee. probably my granola was too rock like, i should have smashed them down. my kids still ate them. they tasted fine. i needed a recipe to use all the granola I got from the 99c store. lol.

These cookies were OK, not the best I’ve had. The recipe only yielded 30 medium-sized cookies for me. Perhaps if I had used a different granola the results would have been better. I make my own granola and made a fresh batch before making these cookies so they were soft and chewy instead of crunchy. The baking time was perfect and the sweetness was just right but they were a bit heavy and dense. I prefer a lighter cookie.
