Ingredients

  1. 1 pound ground beef or turkey
  2. 1 medium onion, chopped
  3. 1 green bell pepper, chopped
  4. 1 (14.5 ounce) can Mexican or chili-style stewed tomatoes, undrained
  5. ½ cup water
  6. 1 (1.25 ounce) package taco seasoning mix
  7. 2 cups elbow macaroni or small shells, cooked and drained
  8. 2 cups Sargento ® Shredded Reduced Fat 4 Cheese Mexican Cheese, divided

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. Cook ground beef, onion, and bell pepper in a large skillet over medium heat until beef is crumbly and no longer pink, about 5 minutes; pour off drippings.

  4. Add tomatoes, water, and taco seasoning; simmer, stirring occasionally, for 5 minutes. Remove from heat. Stir cooked pasta into meat mixture until combined.

  6. Spoon 3 cups meat mixture into an 11×7-inch baking dish. Sprinkle with 1 cup cheese; top with remaining meat mixture. Cover with aluminum foil.

  8. Bake in the preheated oven for 30 minutes. Remove foil; sprinkle with remaining cheese. Continue baking until cheese is melted, about 5 minutes.

Very tasty. I didn’t have Mexican stewed tomatoes or green peppers so used diced tomatoes with green chilies instead. I also added black pepper, a little extra cumin, roasted garlic salt, and smoked paprika. I cut short the baking time by 5 minutes, added the cheese topping and put back under the broiler for a few minutes. I also used a 9 x 13 casserole dish.

I made this tonight and my wife said this is a keeper. There were only two changes I made. I sautéed the onion and pepper (used red pepper instead of green) for about 3 minutes before putting in the ground beef. Also I used two 10oz cans of Rotel tomatoes since this is a sort of Mexican dish. Plenty of leftovers for the two of us and we’ll be making this again!

Seriously! An 11×7 pan did not accommodate even the “required 3 cups of the mixture” let alone all the cheese that’s called for. We had a little shy of 4 cups of “the mixture” left. XERO room in the pan for the cheese. The total recipe was followed to a “T”. Plus, all the baking time? Oh My Gosh! If We had followed this, We would have had a pan of mush.

Oh how I love this simple easy recipe. It is so delicious and my family loves it. I did add a can of tomato sauce and a few more spices. I also used ground turkey instead of Ground meat.

Very easy recipe that your family will enjoy! I did make a few minor adjustments: – Added 2 cloves of chopped garlic. – Added additional tablespoon of taco seasoning. – Used petite tomatoes vs Mexican style tomatoes. My husband told me this recipe is a keeper, that’s a compliment!

Firstly this recipe doesn’t make much sense. To me I don’t know why they made Chili Mac and there isn’t any chili powder, cumin or even chili seasoning packets. To me, it isn’t chili mac if you’re using taco seasoning. But this is what I did and changed. Used Chili Seasoning instead of Taco Seasoning Added 1 can of the diced tomato Used 1/4 cup of water. Reducing the 1/2 cup because of the extra can of diced tomatoes I added.

Very tasty dish. Much better and healthier than hamburger helper chili Mac. I didn’t have Mexican style canned tomatoes so I added a small can of green chilies. I didn’t layer in the cheese. I just topped it with the cheese and baked covered for 30 minutes. I will definitely make this again.

The picture made this look just like a recipe my mom made when I was growing up, so that was my motivation for making this. About half way through, I realized it was not going to be the same as mom’s (picture is obviously a modified version of the recipe: added beans & etc), so I took some liberties and customized it a little bit myself by adding a jalapeño & some additional pepperjack cheese. Family ALL loved it. Teens & toddlers included. I was surprised by how much they raved about it. Our only suggestion would be to use less macaroni and maybe add yet another (orange or roasted red) pepper. My favorite thing about this recipe (besides making me a hero-chef) is how it is a hit without being salty. No added salt or salty ingredients, other than cheese….and you can reduce the amount of cheese if you really want to.

I used 1.5 lbs of hamburger, home made taco seasoning (2 packets worth), and did not have the Mexican tomatoes so used the can of crushed tomatoes I had along with a fresh chopped tomato. I did not add the water where there was so much more tomato than called for. Only had half the cheese but after mixing it up I put the cheese on top and only baked 20 min covered and it was delish. My advise is top with sour cream. I had some without it first and it was great but as leftovers put some on and the difference is crazy.

I left off the cheese (not a big fan of cheese). I added about 1 Tbs of chili powder. It was a little dry, but still very tasty. My next batch (next weekend) will include one bottle of Heinz Chili Sauce. I love Chili Mac, so this simple recipe works great. My youngest son loved it (hates green / red peppers, chunk tomato, etc), and scarfed it down without a thought after I told him the ingredients.
