Broiled SPAM® and Cheese Open Face Sandwiches

Roasting Brussels sprouts in the oven with garlic is simple and delicious.

Ingredients

  1. 3 slices bread
  2. 1 cup fully cooked luncheon meat (such as SPAM®), grated
  3. 1 cup shredded Cheddar cheese

Instructions

  1. Preheat the oven’s broiler and set the oven rack about 6 inches from the heat source.
  2. Place the three slices of bread onto a baking sheet. Stir together the luncheon meat and Cheddar cheese in a bowl. Press the meat and cheese mixture on top of each slice of bread.
  3. Broil in the preheated oven until the sandwiches are hot and the topping is beginning to brown on top, 3 to 5 minutes.

I grew up on something similar to this.. I call them ‘Spammiches’…… You grind or grate the Spam (or Prem, a Canadian version) and then mix in mayo, relish, onion, and other similar tuna- or egg-salad ingredients. Spread on hamburger bun halves, top with cheddar, and broil until toasty. My mom always served them open-faced. Yum!!

I make spam and grilled cheese sanwhiches for my children all the time. I never thought to grate it!!! It worked out well, classic grilled cheese with grated spam and tomatoes. They loved it!

My ex grew up in Hawaii and ate SPAM and eggs all the time. I developed a taste for it, but had only had it as SPAM and eggs. I never thought of grating it…thanks for the idea.
