Broccoli Gratin with Herbed Cream Cheese

We adore broccoli, and when it’s paired with cheese, it tastes even better.

Ingredients

  1. 1 head broccoli, broken into florets
  2. 1 cup vegetable broth
  3. 1 (6.5 ounce) package herb and garlic-flavored cream cheese
  4. 3 tablespoons heavy cream
  5. ½ teaspoon Italian seasoning, or to taste
  6. salt and freshly ground black pepper to taste
  7. 1 pinch ground nutmeg
  8. ½ cup grated Cheddar cheese, or as needed
  9. 2 tablespoons butter, cut into small pieces

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a casserole dish.
  2. Combine broccoli and vegetable broth in a pot and cook over medium heat until broccoli is almost tender, about 5 minutes. Remove with a slotted spoon, drain, and add to the casserole dish.
  3. Combine cream cheese, cream, and a few tablespoons of the vegetable broth from cooking the broccoli. Season with Italian seasoning, salt, pepper, and nutmeg. Distribute cream cheese mixture on top of the broccoli. Sprinkle with Cheddar cheese and butter pieces.
  4. Bake in the preheated oven until cheese is melted and golden brown, about 45 minutes.
  5. You can use any type of grated cheese for the gratin. I often just use up whatever small cheese pieces I have left in my fridge.
  6. You can also mix in cauliflower but double the pre-cooking time for cauliflower.

Pretty good as written although there is changes I’d make next time. Needs more creaminess in my opinion. Cook time was spot on though and flavor was good.
