Bonnie’s New Year’s Beef Dip

Ingredients

  1. 1 (4 pound) beef chuck roast
  2. 2 (10.5 ounce) cans water
  3. 1 (14 ounce) can beef broth
  4. 1 (10.5 ounce) can French onion soup (such as Campbell’s ®)
  5. ⅔ cup reduced-sodium soy sauce
  6. ⅓ cup Worcestershire sauce
  7. 3 bay leaves, or more to taste
  8. 2 cloves garlic, minced
  9. 1 tablespoon dried rosemary

Instructions

  1. Combine chuck roast, water, beef broth, onion soup, soy sauce, Worcestershire sauce, bay leaves, garlic, and rosemary in a slow cooker.
  2. Cook on Low for 8 to 10 hours. Remove beef from cooking liquid and thinly slice.

We liked it there just wasn’t enough Au Jus for dipping. Added a cup of low salt beef broth which did the trick.

I cut the Worcestershire down by half. When the cooking time was near done and I shredded the beef I adjusted the seasoning to my taste. So good on hoagie rolls with some sauteed mushrooms and green peppers. A little shredded mozzarella and it was the best sandwich I’ve had in a long time.

I liked this a lot and so did my daughter, but my husband said it had too much worcestershire sauce in it, which I kind of agree. You really lose the “beef” flavor from it. I topped my beef dip with sauteed onions and peppers and colby jack cheese and served on a ciabatta roll. Pretty yummy, but next time, less worcestershire 🙂

This was very flavorful and a big hit for dinner tonight. Very easy to make, too! I think the recipe name is deceiving. At first glance, I thought this was an appetizer type dip. Not until I read the recipe, did I realize what the dish really was. Thank you for sharing your recipe!
