Beef in Beer in the Slow Cooker

Beer, shallots, bacon, and mushrooms are cooked with succulently soft meat in the slow cooker. Although it doesn’t taste very strongly like beer, the Guiness® makes a delicious gravy. The addition of potatoes and carrots would be excellent because this is a somewhat meat-heavy recipe. To soak up the juices, I serve this with crusty French bread. wholesome and comforting to have at home. Cooks in the slow cooker for 5 hours, although it wouldn’t hurt to simmer it all day.

Ingredients

  1. 4 teaspoons vegetable oil, divided, or as needed
  2. 12 shallots, peeled and left whole
  3. 1 pound cubed beef stew meat
  4. 1 tablespoon all-purpose flour
  5. 1 (12 fluid ounce) can or bottle Irish stout beer (such as Guinness®)
  6. 2 onion, cut in half and sliced
  7. 1 large garlic clove, crushed
  8. 4 slices smoked streaky bacon, sliced into strips
  9. 1 ½ cups fresh button mushrooms
  10. salt and ground black pepper to taste

Instructions

  1. Preheat slow cooker on Low.
  2. Heat 2 teaspoons oil in a skillet over medium-low heat and cook shallots until they are lightly browned, 5 to 10 minutes. Place in the slow cooker. Add beef to the same skillet and cook until meat is seared on all sides and browned, about 5 minutes. Add flour and mix well. Pour in beer and bring to a boil. Transfer beef-beer mixture to the slow cooker.
  3. Wipe out the skillet with a paper towel and add remaining 2 teaspoons oil. Add onion and cook until soft and translucent, about 5 minutes. Add garlic and bacon and cook for 1 minute more. Transfer to the slow cooker. Add mushrooms and season generously with salt and pepper. Cover.
  4. Cook on Low until meat is cooked through, about 5 hours.

I’ve made something very similar for years. Some have commented about it needing something, or the broth not tasty enough. Try adding an envelope of French onion soup mix and leaving out the bacon. It will taste much like a beef burgundy; great with noodles or rice!

I used a chuck roast and cut it into pieces. I cooked it all day, so it was nice and tender. This was an easy and tasty recipe, but it was missing something – just can’t put my finger on it. Send with roasted carrots and homemade white bread.

This was great!! We used 4 shallots but added more mushrooms. We also used jalapeño bacon for a little more zing. With the left overs, we added cut up carrots and potatoes! This made a great stew!! We were thinking for another meal, adding beef broth and barley for a beef and barley soup.
