Barbecue Beef Cups

This is a simple recipe for BBQ beef cups that a friend sent me. My household adores it.

Ingredients

  1. ¾ pound lean ground beef
  2. ½ cup barbecue sauce
  3. 1 tablespoon dried minced onion
  4. 1 (12 ounce) package refrigerated biscuit dough
  5. ⅓ cup shredded Cheddar cheese

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease the cups of a muffin pan.
  2. In a large heavy skillet over medium heat, cook beef until evenly brown. Drain excess fat. Stir in barbecue sauce and dried onion. Simmer for a few minutes over low heat.
  3. Flatten each biscuit, and press into cups of the prepared muffin pan. Make sure the dough comes to the top of the pan. Spoon a portion of the meat mixture into each dough cup.
  4. Bake in the preheated oven for 12 minutes. Sprinkle with cheese and bake for 3 more minutes.

I used frozen mini tart shells; set them out on a cookie sheet to fill. We all know our own ovens. In mine, they bake the best on the rack 2nd from the bottom. They were great!

Solid recipe. Nothing amazing but tastes good and my kids loved it. I agree with others that baking the dough for a couple of minutes alone would probably help with the underbaked feeling the bottom has. I also did not see the point in adding the cheese at the end. It works just fine to add it at the beginning and it’s simpler to do it that way.

We learned to make these in my 8th grade cooking class. The teacher called them “barbi-cups.” They are quite good. Instead of canned bisquits, I whipped up a batch of my homemade bisquite dough. Also, I like to add some fresh finely chopped onion to the meat instead of the dried minced onion; otherwise I make them as written. Thanks for posting the recipe.

I made this and it was so good!!! I used sloppy joe mix instead of what the recipe called for because it’s what I had on hand. But it turned out so good!! I let the cheer brown maybe a bit too much, BUT it was still yummy!!!

I decided to make this for an easy weeknight dinner. I baked the biscuits for about 4-5 minutes before adding the bbq beef and popping back into the oven. It was a major hit with my husband and kiddos so it will be incorporated into my weekly meal plans more regularly. I hesitated on adding the cheese, as I’m not big on cheese with bbq but it was SO good. Add the cheese! You can season the beef to your liking and onions, peppers etc. Delicious recipe!

I use Heinz sweet Hawaiian Smokey BBQ sauce. makes things so much easier… my family loves it and requests it at least once a month.
