Spanish Migas

The exact recipe we used to make this Caesar salad while I was in college may be found in a pretty upscale restaurant. Making tableside meals, such as the finest Caesar salad I’ve ever eaten, was the best part of the job.

Ingredients

  1. 4 cups fresh bread crumbs
  2. 1 cup olive oil, or more if needed
  3. 7 ounces bacon, sliced
  4. 2 slices bread, cut into cubes
  5. 1 tablespoon paprika
  6. 1 clove garlic, minced
  7. salt to taste

Instructions

  1. Wrap bread crumbs in a moist cloth and leave 8 hours to overnight.
  2. When ready to cook, heat oil in a saute pan over medium heat. Add bacon and cook until browned, 5 to 7 minutes. Remove with a slotted spoon to a paper towel-lined plate to drain.
  3. Add bread cubes to the oil and cook until browned. Add more oil if necessary, and stir in bread crumbs, paprika, garlic, and salt. Cook and stir until browned.
  4. Remove from the heat. Mix all ingredients together to serve.
  5. You can substitute Serrano ham for bacon.
