Ingredients
- 1 tablespoon olive oil
- 1 pound bulk Italian sausage
- 1 large onion, chopped
- 4 cloves garlic, minced
- 1 tablespoon Italian seasoning
- ½ teaspoon salt
- ½ teaspoon ground black pepper
- ¼ teaspoon red pepper flakes
- 4 medium potatoes, cubed
- 4 cups chicken broth
- 4 cups chopped kale
- 1 cup half-and-half
Instructions
- Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function.
- Heat oil in the cooker. Add sausage and cook until no longer pink, about 3 minutes. Stir in onion and garlic; cook until softened and translucent, about 3 minutes. Stir in Italian seasoning, salt, pepper, and red pepper flakes. Add potatoes and chicken broth. Close and lock the lid. Select high pressure and set timer for 5 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure using the natural-release method according to manufacturer’s instructions, 10 to 40 minutes. Unlock and remove the lid.
- Stir kale into the cooker. Select Saute function. Cook, uncovered, for 2 minutes. Stir in half-and-half. Turn off the cooker and serve.

Loved it just prefer cheese filled noodles instead but husband loves potatoes so ♀️ used spinach instead of kale. Don’t like kale.
A little bland. Sprinkled some parmesan on top after serving. I will add canellini beans next time as others suggested.
I added a can of white kidney beans and substituted spinach for the kale and used evaporated milk instead of the half and half. Served with grated grana padano on top. Yummy.
This recipe is a great crowd pleaser. I have made it several times and always receive multiple compliments. I also add a can of cannellini beans and I really liked the addition.

Absolutely awesome! Used 1/2 regular sausage and 1/2 hot sausage. Have the soup a gentle kick in flavor without making it too spicy! Have made many times and it never disappoints!!!
It turned out great. I didn’t brown the sausage and onions in the Instant Pot but that was by choice.
I made this as a stovetop recipe and didn’t make any ingredient changes and it was delicious .
I don’t like kale, so I used spinach instead. This dish turned out delicious, everybody served themselves two times (I adjusted it for 8)

I loved this recipe. My family’s favorite soup is the Super Delicious Zuppa Toscana from this website, but this Instant Pot version was quicker and easier and didn’t sacrifice taste at all! Like other reviewers, I used spinach instead of kale and it was great.

I used hot Italian sausage I had in the freezer and it was a little spicy but a little cheese balanced & brought it all together. It was amazingly delicious!

Overall: I Added more cubed potatoes and added 2 cups more of chicken stock to the recipe. . I dredged the Italian sausage after lightly cooking in a frying pan prior to starting the dish in the instant pot. Everything else was a wonderful recipe but enhanced by a bit more volume.
