Tomato and Mozzarella Bruschetta

Ingredients

  1. 3 plum tomatoes, finely chopped
  2. 1/2 red onion, finely chopped
  3. 2 tablespoon capers
  4. 1/4 cup chopped fresh basil
  5. 1/4 pound fresh mozzarella, finely chopped
  6. 2 tablespoons balsamic or red wine vinegar
  7. 4 tablespoons olive oil
  8. Salt and pepper
  9. 4 slices toasted Italian bread

Instructions

  1. Preheat broiler. In a large bowl combine tomatoes, onion, capers, basil and mozzarella. Stir in balsamic vinegar and olive oil. Season with salt and pepper. Top toasted bread with the mixture and place on baking sheet. Broil until cheese melts. Serve hot. Alternative: Substitute 1 cup canned northern white beans for cheese and just top toasts with mixture.

Just made this tonight and I followed some of the other reviewers’ suggestions. I omitted the capers and onion, and added garlic (I love garlic, even raw) I am out of balsamic, so I used red wine vinegar, as suggested. I brushed the bread with olive oil and grilled it on a gas grill then turned it over and added the topping and let it cook on the grill. It was DELICIOUS. I made it for my parents and they both raved and raved about it. This will definitely be in my rotation when I’m using up all of my summer tomatoes!

I made this recipe as an appetizer for friends one night and it was a huge hit! The only modifications I made were I left out the capers and only added 1/4 of an onion. I would also recommend cooking it at a slightly lower temperature for a little longer so the cheese melts completely without browning the top too much. It was really good – so flavorful! I will definitely be making this recipe again!!

Divine…very flavorful! We added garlic and parmigiana regiano. We also used vine ripe tomatoes, which have lots of flavor as well. I think baking it is the best way to bring out all the flavors…absolutely delicious!

This recipe is so easy to make and delicious. I added fresh minced garlic and some Gouda cheese for a strongerflavor. I also added yellow cherry tomatoes for color. It went over very well and I’ll definately make it again. RESTAURANT QUALITY!
