Taleggio and Pear Panini

Ingredients

  1. 1 (1-pound) loaf ciabatta bread (or 8 slices country bread)
  2. 1/4 cup olive oil
  3. 8 ounces Taleggio cheese or brie, sliced
  4. 2 large pears, apples or peaches, cored and cut into 1/4-inch wedges
  5. 2 tablespoons honey
  6. Pinch salt
  7. Pinch freshly ground black pepper
  8. 3 ounces arugula or spinach

Instructions

  1. Preheat the panini machine. Cut the ciabatta loaf into 4 equal pieces. Halve each piece horizontally to make 4 sandwiches. Brush the bread on both sides with olive oil and place the bottom-half of the bread slices in the panini machine in a single layer. Heat until golden, about 3 to 4 minutes. Continue with the remaining top slices of bread.
  2. While the top slices of the bread are in the Panini machine, begin forming the sandwiches. Divide the cheese among the warm bread. Cover the cheese with slices of fruit. Drizzle the fruit with honey. Sprinkle with salt and pepper. Top with a handful of arugula. Place the warmed top half of the bread over the arugula and return the competed sandwich to the panini machine for 1 to 2 minutes more to finish melting the cheese. Remove from the panini machine. Cut the sandwiches in half and serve immediately.

Even with all the rave reviews, I thought this was just okay. I love taleggio, I love pears, and I love fruit with cheeses. This didn’t meld together like I anticipated. Even with the honey, the flavor was all taleggio, and the sweetness didn’t really come through like I had expected. I even tasted my pears ahead to make sure they were sweet, but I was searching for sweetness while eating. Disappointing! Next time I would make a pear chutney or try peaches as others have suggested. This is coming from someone who always puts pears on their cheese and charcuterie boards.

This is great!  I didn’t have the taleggio and with the price of gas here I didn’t want to go to the store I  used what I had on hand which was blue cheese.  It was great!

Wow, this was super delicious, even better than I expected! I made my own ciabatta and used the pears and spinach. The pear was a perfect offset for the Taleggio, and the honey gave it just enough of a sweet touch. I will make this again for certain! Thanks for another winner, Giada!

This recipe was ok, but not great. I would be hesitant to make these for friends because some people don’t like the combination of fruit and cheese. I made it with tallegio, gluten free bread, pears, and some fresh butter leaf lettuce from my garden.

This was AMAZING! I used what it said it to…taleggio, pears, arugula, ciabatta bread and used my truffle salt that I got from William and Sonoma, to add that hint of truffle. I will be making this all the time!
