Spanish Turkey Meatball Stew

Ingredients

  1. 2 tablespoons extra-virgin olive oil
  2. 1 large onion, chopped
  3. 5 cloves garlic, minced
  4. Kosher salt
  5. 1 teaspoon smoked paprika
  6. 1 cup sliced small carrots
  7. 2 14-ounce cans low-sodium diced fire-roasted tomatoes
  8. 2 cups low-sodium chicken broth
  9. 1 15-ounce can chickpeas, drained and rinsed
  10. 1 1/4 pounds lean ground turkey
  11. 3/4 cup loosely packed fresh parsley (about 1 bunch), chopped, plus more for topping
  12. Freshly ground pepper

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the onion, garlic and a pinch of salt and cook, stirring occasionally, until soft, about 5 minutes. Transfer half of the mixture to a large bowl. Add the paprika and carrots to the remaining onion mixture in the skillet and cook 1 minute. Add the tomatoes, chicken broth and chickpeas; bring to a rapid simmer and cook, stirring occasionally, until the sauce thickens slightly, about 6 minutes. 
  2. Meanwhile, add the ground turkey, parsley, 1 teaspoon salt and 1/4 teaspoon pepper to the bowl with the reserved onion mixture and mix with your hands. Form the turkey mixture into 20 meatballs. Place the meatballs in the skillet with the sauce and simmer, turning once, until cooked through, about 7 minutes. Serve with more pepper and parsley.

Followed the directions as written except I did not have roasted diced tomatoes, so I used regular diced tomatoes. It was really good, I would definitely make this dish again.

Followed the directions as written with the exception of baking the meatballs in the oven and adding to the soup. I also let everything simmer in a slow cooker for several hours. I found this to be more like a soup than a stew. It was good but I felt it could use more seasoning. I probably won’t make it again.

Took advice from previous reviews and cooked my meatballs in the oven and then added to the soup. Delicious. I didn’t change anything else. Easy to make and the meatballs make it hearty. Will definitely make again.

Definitely brown the meatballs before adding to the stew. Otherwise, they’ll fall apart.
I enjoyed this recipe a lot. Smoked paprika is one of those ingredients where “too much is too much”, but the amount given in this recipe was perfect for me. I fully expect today’s leftovers to be amazing.

Taste and flavors were decent but the meatballs should be browned before adding. The recipe says to cook them in the stew but they end up falling apart instead.

I always tweak recipes when I think certain things aren’t quite “right”.  Well I didn’t with this recipe and I wish I did.  First, if I am using canned tomatoes, I want to simmer them at least 30-60 minutes to get rid of the ‘canned taste’.   6 minutes?  I tripled it to 20 minutes and it still had that canned taste.  I think that Judy S. had the right idea of making a proper meatballs.  Also, I would have browned/cooked the meatballs prior to adding to the stew to give a better depth of flavor. So, I would cook the “stew” like a good pasta sauce, low and slow to get the flavors to meld. Add in the meatballs and serve over a starch.  As is, I would give it 2 stars, but the changes I will do next time, 4 stars.

Awesome. Didn’t change a thing. Use a good quality smoked paprika. Not the hot or plain. You want the smoke flavors to work with the fire roasted tomatoes. Next time might add or make it with chorizo and or shrimp. With fresh corn off the cob. Got the wife’s approval next the mother n law.
