Soda Bread

Ingredients

  1. 1 cup unbleached all-purpose flour, plus more for kneading surface
  2. 3 cups whole-wheat flour
  3. 2 teaspoons baking soda
  4. 1/2 cup rolled oats
  5. 1 teaspoon kosher salt
  6. 2 cups buttermilk

Instructions

  1. Preheat the oven to 425 degrees F.
  2. In a large bowl, whisk together the flours, baking soda, oats and salt. Pour in most of the buttermilk and mix well, adding more buttermilk, if needed, to form a soft dough. Turn out onto a floured surface and lightly knead into a shapeable dough. Avoid overworking the dough. Shape the dough into a round disk shaped loaf and cut a deep “X” in the top with a sharp knife. Put the dough on a parchment lined baking sheet and bake for 7 minutes at 425 degrees F. Lower the oven temperature to 375 degrees F and bake another 20 to 25 minutes. Remove the bread from the oven to a cutting board. Cool slightly before cutting and enjoy warm!

As I am often want to do, I did improvise a tad.
I had no buttermilk and neither did the market. So I used one cup of milk with a little ACV and one cup of yogurt. I added raisins and 4 TBS of sugar. I also baked it at 425 for the whole 30 minutes. It was great. Today I decided to make a loaf to take to a family gathering. I accidentally grabbed the sour cream when I ran out of yogurt. I figured it wouldn’t hurt since some recipes added butter so a little fat would be OK. The batter was very dry so I added 1/2 cup of sour milk.

I leave milk out on the counter for a few days to sour as my Irish gradnma did, rather than use buttermilk. I checked with a few bakers I know who were raised “on the other side” and this is also their method. I liked it with the buttermilk, but the sour milk works and tastes better to me. Ah, well — to each his own.

To the person looking for rasins and caraway seeds — that’s a breakfast bread in Ireland, this is more the traditional soda bread.

I made this recipe to take to a family dinner. I love Irish Soda bread and needed something quick and easy. I use two recipes from this site. Brother Rick Curry’s which is outstanding. This one is good and the family loved it. I like this as it has whole wheat flour in it. I have home made pea soup and plan on a loaf for dinner. The only problem is deciding on wheat or white. LOL!!! All our problems in life should be so easy.

I quite liked this bread because it is quite easy to do, but next time I will follow the advice of some of the reviews to indicate that it should flatten the mixture before baking otherwise it increases the cooking time and the crust is much more harder

This bread is great! Very, very easy to make and very filling. I added just a little more buttermilk and that made the dough a little easier to work with. This recipe goes well with the cheddar and beer soup.

This was good; a little dense, but perfect for our purpose because we cut the loaf into two and formed the two mini loaves into round “balls” so that we could have bread bowls for our cheddar beer soup. This was a great bread to make into bread bowls for soup on a fall day.

Next to Darina Allen,the Best and Least items for a moist bread.Add in about half a cup of Baking Raisins if enjoy and this is lovely with the Italian cheese known as Marscapone to Spread on After Baking,sliced.Similar to Cream Cheese,just not as Tart.Easy to remember as some cakes are as well. Don’t forget to “slash” the Top as the Irish do in a Cross. Also, try a sugary crumbly crunchy mix on top .Brush w/melted butter for this to stick~1 Tbls.cinnamon,1 Tbls.Brown sugar or Super~Fine Sugar/Bar Sugar for rimmed drinks and rub in with fingers.Tastes really good.If begins to darken,lightly cover w/piece of Foil~While Baking…
