Yield: 4 servings as a first course

Ingredients

  1. 1/4 cup extra-virgin olive oil
  2. 1 small onion, finely chopped
  3. 1 garlic clove, finely chopped
  4. 1 celery stalk, finely chopped
  5. 1 carrots, peeled and finely chopped
  6. 1/2 teaspoon sea salt
  7. 1/2 teaspoon freshly ground black pepper
  8. 1 (32-ounce) cans crushed tomatoes
  9. 1 dried bay leaves

Instructions

  1. In a large pot, heat the oil over a medium-high flame. Add the onions and garlic and saute until the onions are translucent, about 10 minutes. Add the celery, carrots, and 1/2 teaspoon each of salt and pepper. Saute until all the vegetables are soft, about 10 minutes. Add the tomatoes and bay leaves, and simmer uncovered over low heat until the sauce thickens, about 1 hour. Remove and discard the bay leaves. Season the sauce with more salt and pepper, to taste.
  2. (The sauce can be made 1 day ahead. Cool, then cover and refrigerate. Rewarm over medium heat before using.)

I made this recipe but it really needed basil, oregano, and parsley. I added red pepper flakes, red wine & baking soda to cut the acidity. My emerson blender created a smoother sauce. I added parmesian cheese & stirred at the end.

Why buy marina sauce? I never realized how easy it is to make fresh marina. Love the recipe. It’ll be my go to.

I’ve made this sauce many times over the years. It’s delicious. When you blend up the vegetables cooked in sauce, it takes it up to another level. Delicious!!

Wonderful!

This recipe is good, but not authentic. I like my marinara with red pepper flakes, more garlic, and just onion. Simple. This marinara comes out thick, almost like a paste. It is good for kids as it’s sweet and has some vegetables in it.

Perfect! Must use San Marzano tomatoes. I added a small amount of cooking sherry but red wine would also be good.
