Ingredients
- 1 pound quince paste, see note
- 1 cup almonds, roasted and finely chopped
- 1 pound Manchego cheese, see note
- 1 bunch watercress
Instructions
- Cut the quince paste into 1-inch cubes and roll them in the crushed almonds. Cut the cheese into 1-inch cubes.
- Put a quince cube onto a toothpick, then a watercress leaf followed by a cube of cheese. Place on a platter and serve.
- Note: Parmigiano-Reggiano can be substituted for the Manchego. Quince paste can be found in cheese shops or Latin markets.

Love membrillo (quince paste and Manchego together. Practically lived on this while visiting Spain.
I have made this dish several times. It is always a hit. My vegetarians friends love it once they know they can eat it. Tyler, you are my favorite , you rock.
Outstanding taste & presentation on this appetizer. Exotic and yummy. To the gourmet food group person – what about using the leftover Quince paste as a base for a vinaigrette for either a savoury or fruit salad? That’s what I plan to do. Give it a try. Beat you to the salad bowl !!
Our gourmet group thoroughly enjoyed this appetizer. I would make it again in a hearbeat. My only caution: it makes a lot! I only used about eight ounces of quince paste, and a corresponding amount of Manchego, and that made a plate of skewers sufficient for 8-10 people (assuming this is not the only appetizer served). I also cut the cubes smaller — and inch of each would be quite a mouthfull!
