Ingredients
- 4 tablespoons olive oil
- 1 pound Loukanika sausage, large diced
- 1 yellow onion, chopped
- 3 cloves garlic, crushed
- Fresh oregano, to taste, chopped
- 1/2 pound plum tomatoes, chopped
- 4 eggs, beaten
- 2 tablespoons scallions, chopped
- Salt, to taste
- Pepper, to taste
Instructions
- Heat the olive oil, on medium high heat, in a non-stick pan, add the sausage and saute quickly to render juices. Add the chopped onions and cook until translucent. Once the onions are cooked, add garlic, oregano and tomatoes and cook slowly for 5 minutes. Add the beaten eggs to the pan, and toss in scallions and begin folding together slowly with a rubber spatula. When well blended, season with salt and pepper and serve hot.

Oh My God, when I read this recipe, I was immediately reminded of my mom in the kitchen whipping this up as a last minute meal. It’s delicious and I like the addition of the scallions. IIt’s quick and easy and a great meal. If you can find “Old Neighborhood” locankiko it’s the best!!
