Instructions
- Combine 2 cups leftover mashed potatoes, a heaping 1/3 cup flour, 2 tablespoons milk and 1 tablespoon chopped mixed herbs in a bowl; knead until smooth. Season with salt and pepper. Divide into 4 balls on a floured surface and flatten each into a 3-inch patty. Melt 1 1/2 tablespoons butter in a large skillet over medium-high heat; add the patties and cook until golden brown, 4 to 5 minutes per side, adding more butter to the pan as needed. Season with salt.

Grandmother Irish. Here’s the deal: Just keep adding flour until the dough stops sticking so much to your fingers. We never kneaded it, either. After they have been fried to your liking, split them open like an English muffin. Add a pat of butter and watch it melt. Or the favorite: pour gravy over the split cake and serve with “meat cakes” which are simply fat burgers which have been baked in the oven.
I followed the recipe as written, but I must not have kneaded enough, or incorporated enough additional flour. They fried up nicely but the end result was gummy and not pleasant. I won’t be making this again.

These are how my Sligo Grannie made them.such a simple dish…but it packs a hearty lunch, when low on funds
My mom always made these with chopped sauteed onions mixed in. these were our favorite leftover. I even fry mine now turning once.
