Ingredients

  1. 6 large egg yolks
  2. 1/2 cup sugar
  3. 1 cup whole milk
  4. 1 cup heavy cream
  5. 1/2 vanilla bean, split lengthwise and seeds scraped out
  6. 1 ounce Baileys Irish Cream
  7. 1 ounce Irish whiskey
  8. Dash of chocolate bitters
  9. 2 ounces Guinness stout

Instructions

  1. Make the ice cream: Whisk the egg yolks and sugar in a large bowl until pale. Bring the milk, heavy cream, and vanilla pod and seeds to a simmer in a small saucepan. Slowly whisk the hot liquid into the egg mixture; strain through a fine-mesh sieve into a clean bowl, then set the bowl in a larger bowl of ice water. Add the Irish cream and whiskey and stir until cool. Transfer to the refrigerator and chill at least 3 hours. Freeze in an ice cream maker according to the manufacturer’s directions. 
  2. For each float, put a scoop of the ice cream in a glass. Add the chocolate bitters and top with the Guinness. If you don’t have an ice cream maker, fold Baileys Irish Cream and whiskey into softened vanilla ice cream and freeze until firm.

OMG: I just spent an hour and a half to find this exact recipe because I made it last year and loved it but couldn’t remember where I got it…of course I looked here first but knew I did not make my own ice cream from scratch so I passed on it, but got back to it through Pinterest when I noticed the note that says “if you don’t have an ice cream maker you can fold the Baileys and Whiskey into softened ice cream” YES, this is it! I can not wait to make this for St Patty’s again this year!!! I’ll be making it for others that have heard me talk about it for a year now this time and I may not wait till next St Patty’s to make it again…plus I’ve already saved it to my recipe box and will have several copies printed and kept everywhere so I will not have any trouble finding it ever again, lol. This is that good and worth the $! :-

The ice cream was sooooooo good, but this is expensive to make and does not make a lot.
