Ingredients

  1. 1/2 cup butter
  2. 1 cup water
  3. 1/4 teaspoon salt
  4. 2 limes, zested
  5. 1 cup all-purpose flour
  6. 3 eggs, beaten
  7. Vegetable oil, for frying
  8. 1/2 cup sugar
  9. 2 teaspoons ground cinnamon

Instructions

  1. In a large saucepan over medium heat, melt butter with water, salt and zest of 1 lime. Bring to a simmer and then slowly whisk in flour. Remove from heat and keep whisking until mixture forms a ball and breaks away from the sides of the pan. Slowly add eggs in thirds. Spoon batter into a pastry bag fitted with a large star tip and refrigerate 15 minutes. Meanwhile, fill a large saucepan 2/3 full with vegetable oil and heat to 350 degrees F. Remove batter from refrigerator and slowly squeeze 3-inch long strips of batter into the oil. Fry in batches, until golden brown, 5 to 6 minutes, flipping halfway through. Drain churros on paper towels. In a paper bag, add sugar, cinnamon and remaining zest. Once churros have cooled slightly, in batches, toss churros in bag and shake to coat with cinnamon sugar. Serve warm.

The skinnier the churro, the better. The lime zest adds a really odd flavor that I hate and it just wasn’t worth it overall. I ended up throwing them all out. Although it was an easy recipe I will definately not be making these again.

These were good, but I agree with some of the other reviewers that the dough wasn’t quite what I was expecting for churros. I felt it was slightly too dense, neither fluffy nor crunchy enough. I might try adding a little baking soda next time if I try it again.

My daughter and her friend made these for a project. The whole class could not get enough of them, even the teacher loved them too! Plus her friend’s parents asked for the recipe because they loved them so much!!!!:) Although, instead of using the lime zest they used the zest of one orange and they added a few pinches of sugar to the batter. They were out of this world!
