Ingredients
- 1 tablespoon sour cream
- 2 large eggs
- Kosher salt and freshly ground black pepper
- 1 teaspoon butter
- 1 tablespoon chopped chives
Instructions
- Mix together the sour cream and eggs in a small bowl. Sprinkle with salt and pepper and mix well.
- Melt the butter in a nonstick pan over medium-low heat. Add the eggs and gently scramble. Remove from the heat, sprinkle with the chives and serve.

Just tried this. And OMG!!! Soooo good!
Very delicious and easy to make. I would’ve never thought to put together this combination of ingredients, but the end result was creamy, fluffy eggs! This recipient eggs the overwhelming flavor that eggs can sometimes have.
I like how the sour cream changes the boring flavor of regular scrambled eggs.

They were very light and fluffy compared to regular scrambled eggs and the sour cream gave them a nice flavor
I make this recipe by melting (liquefying) the sour cream in frying pan (on low) and then slowing integrating beaten eggs until well mixed. I also add finely chopped celery and either ham,turkey or deli chicken immediately after and fry on low heat. My version of a Polish omelette.
This does make the eggs nice and fluffy, for sure!
