Ingredients
- Nonstick cooking spray
- 4 large eggs
- Kosher salt
- 4 slices buttered brioche toast, for serving
Instructions
- Preheat the oven to 350 degrees F. Line a baking sheet with parchment and coat with nonstick cooking spray.
- Coat 4 small bowls with nonstick cooking spray. Separate the eggs and put the whites into a medium bowl and the yolks in the small bowls (1 yolk per bowl). Add a large pinch of salt to the egg whites and beat with an electric mixer on low speed until stiff peaks form, 2 to 3 minutes.
- Dollop 4 large spoonfuls of the egg whites onto the prepared baking sheet and make a small well in the middle of each with the back of a spoon. Bake the whites until they are firm, no longer wet and just beginning to turn brown, about 6 minutes. Gently pour 1 yolk into the well of each white. Bake until the edges of the yolk just start to set while still being runny, 3 to 4 minutes. Season with salt.
- Serve on top of buttered brioche toast.

Very Very good
I was looking for a recipe my Dad used to make 50 years ago when I was a kid. Very similar to this, it was a “bird’s nest” made the same way – on toast with beaten egg whites and the yolk in the center. The only difference was he cut cheddar cheese into thin, narrow twigs and crisscrossed them on the egg whites before baking on the toast to make them resemble birds’ nests. I just made this with that addition, and they were close to what I remember – I’ll need to perfect my ‘cheese twigs’! But this is great. I just added a couple of turns of Everyday Seasoning to each before baking.
pretty yummy, the only thing that could b improved is the salt amount. i found a “large” pinch of salt (as stated in recipe) is too much; eating it now i feel is too salty & i love salt haha. i didn’t season it after with salt or any other flavorings and still found it yummy. overall, v simple & yum just less salt (prob only a regular pinch).

Very easy recipe; I cooked the yolks closer to 4-1/2 minutes, 4 seemed too runny for me. Great on any sort of toasted bread or even a hamburger bun!
I always feel satisfied after eating a couple of these tasty eggs.

If I could give this 0 stars I would. Me and my mom were looking forward to this and we did it with a electric mixer and it did not turn fluffy like the video.
