Ingredients
- 3 tablespoons butter, melted
- 8 eggs
- 8 tablespoons heavy cream
- Kosher salt and freshly cracked pepper
- Assorted toppings: shredded Cheddar cheese and crispy chorizo (see Cook’s Note); diced lox and scallions; sauteed sliced mushrooms; 1-inch pieces of steamed asparagus; crumbled feta and chopped chives
Instructions
- Preheat the oven to 375 degrees F. Bring a kettle or small pot of water just to a simmer.
- Brush the insides of 8 small ramekins with the melted butter. Crack 1 egg into each ramekin. Add 1 tablespoon of heavy cream to each ramekin and season with salt and pepper. Add any combination of toppings to the ramekins. (Or even better, let your guests add their preferred toppings.)
- Place the ramekins in a high-sided baking dish. Pour the simmering water into the baking dish until it comes about halfway up the ramekins. Cover loosely with aluminum foil and bake until the eggs reach a custard-like consistency and the yolks are just set, 12 to 15 minutes.
- Carefully remove the ramekins from the water bath. Let cool slightly before serving.

Could anyone advise if these could be prepared with beaten eggs instead of unbeaten?
Very good. Like the other reviewers suggested, I added 2 eggs and 2 Tablespoons of cream to the ramekin. I also added diced ham and cheese. Next time, I’ll try some hasbrowns too. Due to doubling the recipe, it took about 20-25 minutes to cook my liking (just a little runny). Will have fun trying new ingredients in the future.
I will make this and give a review. But I am disappointed that you do not show pictures of your recipes as I print out a lot of them and would like to remember what they look like. Probably won’t use the Kitchen app as much because of that.
Doubled the egg and cream per ramekin (I used a small coffee cup) and used sauteed mushrooms and shallots, turkey sausage (pre-cooked crumbles from the grocery store), and some habanero cheddar I found in the affordable for me “try me” basket of the fancy cheese deli. AMAZING! Will be buying some ramekins just for this because the ones I have would take 4-5 eggs to fill
Very good! I used two eggs & two tbsp heavy cream per ramekin since the ramekins I have were bigger. Hubby and son loved them. Put fried pancetta, Sautéed mushrooms, and cheddar cheese on ours and son’s same minus mushrooms. Definitely will make again!
This is a great recipe. I make this on the weekend just for one.
I made these plain with only chives sprinkled on top. I put 2 eggs in each dish with 2 T cream. They turned out delicious.
