Ingredients
- 4 tablespoons unsalted butter, softened
- 2 tablespoons chopped fresh tarragon or basil
- 8 ounces sliced mixed mushrooms (about 4 cups)
- 4 stalks celery, sliced
- 1 bunch scallions, sliced
- Kosher salt and freshly ground pepper
- 4 6-ounce tilapia fillets
Instructions
- Preheat the oven to 400 degrees F. In a small bowl, mix the butter and tarragon until combined; set aside.
- Lay out 4 large pieces of foil. Layer the vegetables in the center of each piece of foil, starting with the mushrooms, then the celery and scallions. Dot the vegetables with some of the herb butter (use about half) and season each portion with 1/4 teaspoon salt, and pepper to taste. Lay the tilapia fillets over the vegetables; dot with the remaining herb butter. Sprinkle each fillet with 1/4 teaspoon salt, and pepper to taste.
- Bring the foil ends together, fold over and crimp closed on all sides to make sealed packets. Place the packets on a baking sheet and bake until the fish is cooked through but still moist, 18 to 22 minutes. Remove the packets from the oven and let sit 2 minutes before opening. Transfer the fish and vegetables to plates and drizzle with the cooking juices.

Really great. Can’t have onions so subbed in radishes. Foil prep super easy but could use parchment to be fancy.
Pretty good. I subbed yellow onion for the scallions and omitted the celery. Added lemon pepper seasoning to fish. Was cooked perfectly in the 18 minutes.
This was really delicious and my family loved it!!! which surprised me as we are not big fish eaters. So thank you very much!! I will be making this many more times in my kitchen
This was really good. I liked the freshness of the herbs on the fish. I’ll definitely be making this again. I added lemon zest to the butter mixture to give it a bit of brightness. I also served the fish with fresh baked bread and used the leftover herb butter on the bread.
This was really good. Did what the other suggested and added some tonys for flavor on the fish. Will definitely make again. I did switch out the celery for green beans. Its so easy you can add or substitute anything you want.
As one user already stated: “Not a wow kind of dish…but it does the trick”
Tasty! A recipe you can do anything with – change the herb in the butter, change the veggies, anything you want. I served it over noodles and everyone liked it.
I love the simplicity of this dish, but have made small changes and it keeps getting better, according to the family. I initially used tilapia, then used flounder fillets, and those were a hit. Also layered green beans and carrots atop the mushrooms, and yummy! This is a great dish!

I was pleasantly surprised by this one. I made it with the basil and added some lemon zest to the butter. The salt and pepper is key to giving it flavor though since there is not a lot of bold flavors in the recipe. The fish was cooked perfectly and the mushrooms gave it an earthy flavor that I loved. I was skeptical of the celery but found it to give the dish a much needed crunch and I really liked it. I used portabello mushrooms and served it with wild rice. I will make this one again and look forward to eating the left overs.
