Ingredients
- Vegetable cooking spray
- 1 egg white
- 1/2 cup chunky peanut butter
- 1/3 cup brown sugar
- 1/4 cup honey
- 1/2 cup (1-stick) unsalted butter, melted
- 2 cups old fashioned oats
- 1/4 cup slivered almonds, toasted, *see Cook’s Note
- 1/3 cup miniature chocolate chips
Instructions
- Position an oven rack in the middle of the oven. Preheat the oven to 350 degrees F.
- Spray a 7 by 10 3/4-inch nonstick baking pan with vegetable cooking spray. Lay a 6 by 18-inch piece of parchment paper in the pan, allowing the excess paper to hang over the sides. Spray the parchment paper lightly with cooking spray.
- In a medium bowl, using a hand beater, beat the egg white until frothy. Stir in the peanut butter, brown sugar, and honey. Add the melted butter, oats and almonds. Stir to combine, then add the chocolate chips.
- Using a rubber spatula, spread mixture into the prepared baking pan, pressing lightly to form an even layer. Bake until the edge of the mixture begins to brown, about 15 minutes. Remove from the oven and let cool for at least 1 hour. Cut into 1 1/2-inch squares and serve.
- *Cook’s Note: To toast almonds, arrange in a single layer on a baking sheet. Bake in a preheated 350 degree F oven until lightly browned, about 8 to 10 minutes.

I made these for the first time today. The flavor is good, but as other reviewers mentioned, still soft even after 20 min in the oven and cooling on the counter for an hour. As a fix, I put them in the freezer for about another hour to firm up. Worked great! Much easier to work with once firm.
Tastes great. However, my bars crumbled. Any ideas on what I might have done wrong. The bars were cooled.
I baked these for an additional 5 minutes and they set pretty nice. They were pretty crumbly, but I just used a spoon to eat. They were very delicious, I just think they are more of a dessert than a breakfast granola bar for me personally!
Hello. I have not made them yet. This is a question? Can I use cacao nibs instead of chocolate chips? They are not sweet on there own but I use them in my energy ball recipe & they are yummy. Seems like they would work in this too?
Did NOT hold together – WAY too much butter. Turn out as total mush.
I don’t know what I did wrong. They never harden up. Cook about 25 mins, after over an hour cut them, let them sit over night only to find them still bendable. Cooked an additional 15 mins and after another hour or so they finally seemed harder but still very chewy. Not really the texture of a granola bar I was expecting. I did notice the instructions were different as far as the order the ingredients were mixed than the video. Does that matter? Maybe my egg was not whisked enough? In error I did put the egg white in towards the end of mixing. I want to try again but hate wasting ingredients if it doesn’t work out again. I’m hoping the taste is a little better. The oats tasted a little “raw” and there is some sort of after taste, perhaps the honey? The recipe was very easy and quick.
This recipe was great. Followed the recipe and Added some chia seeds and pistachios to it.
Husband’s favorite bars have always been unbaked oatmeal cookies UNTIL I MADE THESE! I followed recipe exactly except for using a 9×9 pan and baking for an additional 10 minutes in a regular oven (not convection). I have been told (by hubby) that I need to save this recipe and make them again. I,too, find them delicious!
So glad it wasn’t me..and I Didn’t read the reviews ahead of time like I normally do but they’re delicious but it could just be a yogurt topping they didn’t hold shape at all and I also just use creamy peanut butter but I didn’t think that was the problem I think it might’ve been all that butter left them so soft
Peanut Butter Granola Bars are delicious! I’am a diabetic & just used less sugar. The other content of ingredients made it work just fine. I cut smaller bars & even cut some in half to still get the enjoyment. Smaller pieces at a time is better for everyone. Everything within reason. Elizabeth
