Ingredients
- 1 1/2 pounds sweet potatoes, peeled and cut into bite-sized chunks
- Salt
- Extra-virgin olive oil, for liberal drizzling
- 4 slices good quality lean bacon, chopped
- 1/2 cup beef stock
- 2 tablespoons wine vinegar
- A few dashes hot sauce
- 1 teaspoon smoked sweet paprika or sweet paprika
- Freshly ground black pepper
- 1/2 small red onion, finely chopped
- 2 to 3 small ribs celery, finely chopped
- A handful parsley leaves, finely chopped
Instructions
- Put the potatoes in a pot over medium heat and cover them with water. Bring to a boil then salt the water and cook until just tender, about 15 minutes. Drain the potatoes and return them to the hot pot. Heat a small pan over medium-high heat and drizzle in some extra-virgin olive oil. Add the bacon and cook until just about crisp. Add the stock to the pot with the potatoes along with the vinegar and hot sauce and stir over low heat until combined. Turn off the heat and season with paprika and salt and pepper, to taste. Transfer the potatoes to a serving bowl and stir in chopped onions, celery and parsley. Dress the salad with a liberal drizzle of extra-virgin olive oil and serve immediately.

I am eating paleo and this is one of my favorites. I make it in large batches and enjoy it cold even more. I do roast the potatoes instead of boiling them, it can turn out mushy if you boil them.
This has become a family favorite and staple in our house. I do not generally like sweet potatoes. I love this dish. The sweet/savory combo with the dash of heat is amazing. I do not add the parsley because I don’t necessarily care for it. I’ve also made it several times without the paprika for a family member who doesn’t care for it. I think the paprika is a terrific addition to the dish, but it’s still delicious without it.
It’s amazing leftover the next day!

There is a problem with the recipe: Instead of cooking bacon in a separate pan, drain the sweet potatoes and saute in same pot. Then you return the potatoes to the pot, and continue with the recipe as written.
There was no problem with how it tastes: the richness of bacon and sweet potato with the crunch of celery and onion. I could eat this every day.
Great dish … Used the roasting modification and it turned out wonderful. Will definately make it again … A keeper!
Great side dish. It would be better to bake the sweet potatoes instead of boiling them. It would prevent over cooking.
I followed the suggestion of roasting the potato’s and the final dish was great. I used a champagne vinegar, since I had an open bottle handy. This is a very healthy recipe, (except for the bacon) that doesn’t taste healthy. Going in the keeper file in my house. I didn’t add any more EVOO at the end.
I eliminated a couple of steps by roasting the sweet potatoes, drizzled w/olive oil, sprinkled with salt, pepper & smoked paprika, in a preheated 450 degree oven for 20 minutes. In another pan, lined with parchment paper, I cooked the bacon alongside the potatoes. You have to keep an eye on the bacon for desired crispness but they were both done about the same time. While bacon & potatoes were roasting, I prepared the rest of the dish. Got rave reviews and requests for the recipe….
I assume this was my fault, but I followed the recipe and the potatoes turned to mush as I stirred in the other ingredients. I think the flavor would have been good. Are the sweet potatoes supposed to be slightly crunchy? My guests really liked it, but I am not a fan.
My family loved this salad. They kept raving about it through our meal. We have given up regular potatoes and now only eat sweet potatoes. I am always looking for new recipes for sweet potatoes and this was an easy and delicious recipe!
This was not a good choice. The red onion plus the beef broth take away from the sweetness of the sweet patato. Rachael usually comes up with good ones, this is not one in my book.
