Ingredients
- Kosher salt
- 3/4 teaspoon store-bought or homemade garam masala, recipe follows
- 1/2 teaspoon ground cumin
- Freshly ground pepper
- 2 pounds sweet potatoes, peeled, and cut into 1/2-inch slices, then again into 1/2-inch sticks
- Olive oil
- 3 large cinnamon sticks (if you have the kind you get at Indian stores, it’s about 3 tablespoons of cinnamon bark bits)
- 3 tablespoons whole cloves
- 1/4 cup green cardamom pods, shelled, husks discarded (about 2 tablespoons of seeds)
- 4 large black cardamom pods, shelled, husks discarded (about 1 tablespoon of seeds), optional
Instructions
- Preheat the oven to 450 degrees F.
- In a small bowl, toss together 1 rounded teaspoon of salt, garam masala, cumin and some freshly ground black pepper to taste.
- Add the sweet potatoes to a large bowl, drizzle with enough olive oil to coat, and sprinkle with the spice rub. Toss well to coat evenly.
- Pour the sweet potatoes out onto a parchment paper-lined baking sheet or a baking rack, making sure all the pieces are evenly spaced. Bake 30 to 35 minutes, flipping halfway through. Remove the potatoes from the baking sheet and serve immediately.
- Combine the cinnamon sticks, cloves, green cardamom seeds, black cardamom seeds, if using, in a spice grinder or coffee grinder and grind until fine. Store the spice mix in an airtight container away from direct sunlight.

The fries were a delicious mix of flavors, although I’d have preferred a slightly crispier fry. An easy to make, super cheap, and exciting flavors make it a great choice.

I had all the spices and some sweet potatoes on hand so I decided to make up some nice food while bf watched a football game, these were perfect when baked at 400 degrees, the sweet and savory scent filled the kitchen, they were great with a scallion aioli (garlic mayo… great and easy idea, good recipe I can make over and with my own variations.
I tried this recipe, but I added some extra cinnamon to them since I love cinnamon on my sweet potatoes too ^__^
Very yummy although my fries didn’t get crispy. . .I took them out a little early though in fear that the spices would burn, but then since they seemed okay I put them back in. However even though the spices started burn, the fries were still limp and soft on the outside. I tried to broil it after to crisp them up to no avail. I will try this again but change the temperature and cook time.

My family and I really loved the flavor of these sweet potato fries! However, 450 was just too hot for them to cook at. They burnt the first round and I found 400 was better, otherwise it would have 5 stars. Great, easy recipe!
